¼ cup balsamic vinegar
¼ cup orange juice
1 teaspoon honey
1 tablespoon cornstarch
¼ cup chicken stock
1 cup fresh blueberries
2 teaspoons chopped fresh chives
4 (6 ounce) salmon steaks
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • Pour 1/2 cup chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in 1/4 cup of chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Nonstick cooking spray

6(8 oz.) salmon fillets (1/2 inch thick)
2 shallots, peeled & very thinly sliced
1 1/2 c white wine
1 Tbsp white wine vinegar
1/2 tsp thyme
1 1/3 c blueberries
4 Tbsp unsalted butter
2 Tbsp honey
salt & pepper to taste

Steps:

  • 1. In a medium saucepan over low heat, simmer together shallots, wine, vinegar and thyme for 15 to 20 minutes or until most of the liquid is gone.
  • 2. Add the blueberries, butter and honey. Cook until the berries soften about 2 to 4 minutes.
  • 3. Meanwhile, spray the salmon with cooking spray. Salt and pepper to taste.
