1/4 cup chopped fresh rosemary
1/4 cup chopped fresh mint
6 cloves garlic, peeled and chopped
1 shallot, peeled and chopped

1 TBS kosher salt

Zest from 1 large lemon

Steps:

  • With a sharp knife, slice deep slits all over leg of lamb.
  • In a bowl, combine remaining ingredients and make a paste.
  • Place the leg of lamb on a large baking sheet and rub herb mixture all over and stuff into the slits.
  • Cover entire lego of lamb with plastic wrap and let marinate in the refrigerator for 4 hours or up to overnight.

2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon cumin
1 teaspoon mixed herbs - Italian, Greek, or French blend

¼ teaspoon cinnamon
1 pinch cayenne pepper
salt as needed
¼ cup orange marmalade
1 pinch hot chili flakes
½ tablespoon rice vinegar
1 tablespoon chopped fresh mint

Steps:

  • Place lamb chops in a large bowl. Season with olive oil, garlic, cumin, mixed herbs, pepper, coriander, cinnamon, cayenne, and salt. Toss until well coated with oil and seasonings. Cover and refrigerate. Allow to marinate at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Place lamb chops on grill. Sprinkle the chops with a bit of salt. 1 tablespoon finely chopped rosemary leaves
1 teaspoon minced garlic

6 (4-ounce) double lamb rib chops (2 ribs) with bones attached, ribs frenched

1 tablespoon olive oil
2 tablespoons minced shallots
1 cup balsamic vinegar
1 large or 2 small rosemary sprigs

  • Make the balsamic drizzle while the lamb is cooking: Set a 1-quart saucepan over medium heat and add the remaining 1 1/2 teaspoons of olive oil. Once the oil is hot, add the shallots to the pan and sweat until translucent, about 1 minute. Add the garlic to the pan and sweat for 30 seconds. Pour the balsamic vinegar into the pan and bring to a boil. Add the rosemary and allow the balsamic to gently boil and reduce until only about 1/4 cup of balsamic remains, about 10 minutes. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Remove from the heat and swirl the butter into the pan. Remove the rosemary sprigs before using.

Lamb on rosemary skewers has to be one of the oldest recipes in the world. In ancient times, the meat could just as easily have been goat, or something wilder, and fish was no doubt also a candidate. The idea of cutting branches of rosemary and using them as skewers must certainly have occurred to humans soon after they figured out how to build fires. You want rosemary branches with woody stalks, if possible. But if the stalks are too flimsy to poke through the lamb, run a pilot hole through with a skewer, and be sure to grill the lamb and figs separately because they'll cook at different rates. You might throw together a little basting sauce of lemon, garlic and a little more rosemary, but the skewers are just fine without it, and have been for thousands of years.

10 to 20 fresh figs
Rosemary branches
1/4 cup extra virgin olive oil, more or less

4 sprigs rosemary
1 tablespoon mint
1 tablespoon oil
2 1/3 kg lamb
1 kg potato
4 tablespoons ginger syrup

  • Preheat the oven to gas 4, 180C, 160°C Pound together the ginger and leaves from half of the rosemary sprigs and mint. Add the oil and mix together. Make slits in the surface of the lamb and push in the ginger and herb mixture. Put onto a rack in a roasting tin and roast in the oven for 2 1/2 hours for medium meat (or around 3 hours for well done).
  • About 45 minutes before the end of the cooking time, add the potatoes to the roasting tin or a separate tray and drizzle with a little oil. Scatter with leaves from the remaining rosemary sprigs.
