Nonstick cooking spray, for the grill grates
3 to 4 large russet potatoes, cut lengthwise into 1/4- to 1/2-inch oval slices
Kosher salt and freshly ground black pepper
Garlic Oil, recipe follows
4 cloves garlic
3/4 teaspoon kosher salt
1 cup extra-virgin olive oil
2 tablespoons finely diced fresh chives
2 tablespoon chopped fresh parsley
Juice of 1/2 lemon

Steps:

  • Heat grill to medium heat and oil the grates with cooking spray.
  • Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. 3/4 teaspoon smoked paprika
1/2 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill to medium-high heat.

6 red potatoes
2 tablespoons olive oil
1/2 teaspoon crushed garlic
1/8 teaspoon salt
