FOIL PACKET GRILLED POTATOES

Categories     Potato

Time 55m

Yield 6 serving(s)

Number Of Ingredients 7

1/2 cup salad dressing
3 cloves minced garlic
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
3 baking potatoes, cut 1/4 inch thick
1 large sliced onion

Steps:

  • In a large mixing bowl, blend together salad dressing and seasonings.
  • Next, add potatoes and onions and toss until covered.
  • Divide potato mixture evenly among 6 foil packets.
  • Double fold ends of packets to seal but leave enough room for heat to circulate Place packets on heat grill and cook for 25 to 30 minutes.
  • Make sure lid is down while cooking.
  • To cook in oven, Preheat oven to 425 degrees and cook for 40 to 45 minutes.

Tips:

  • Choose the right potatoes: Waxy potatoes like Yukon Gold or red potatoes hold their shape better during grilling and won't fall apart. You can also use a combination of waxy and starchy potatoes, such as a blend of Yukon Gold and Russet potatoes.
  • Cut the potatoes into uniform-sized pieces: This will ensure that they cook evenly. If the pieces are too large, they may not cook through, and if they're too small, they may overcook and become mushy.
  • Toss the potatoes with olive oil, salt, and pepper: This will help them to brown and develop flavor. You can also add additional seasonings, such as garlic powder, onion powder, or dried herbs.
  • Wrap the potatoes tightly in foil: This will help to keep them moist and prevent them from drying out. Make sure to seal the foil packets tightly so that no steam can escape.
  • Set up your grill: Prepare your grill for medium heat by preheating it to 400°F (200°C). If you're using a charcoal grill, arrange the coals to create a two-zone fire, with one side hotter than the other. This will allow you to easily move the foil packets to a cooler area if they start to cook too quickly.
  • Cook the foil packets: Place the foil packets directly on the grill grates over the medium heat. Cover the grill and cook for 20-25 minutes, or until the potatoes are tender and easily pierced with a fork. If you're using a charcoal grill, move the foil packets to the cooler side of the grill if they start to cook too quickly.
  • Serve immediately: Open the foil packets carefully, being careful not to let the steam escape. Serve the potatoes hot with grilled asparagus and your favorite dipping sauce, such as sour cream or salsa.

Conclusion:

Grilled potato and asparagus foil packs are a delicious and easy-to-make side dish that's perfect for summer cookouts. With just a few simple ingredients and a little bit of time, you can create a dish that's sure to impress your friends and family. So fire up the grill and give this recipe a try today!
