Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

1 pork tenderloin (about 1 1/4 pounds)
Kosher salt and freshly ground pepper
1 tablespoon ground fennel seed
2 cloves garlic, minced
1 teaspoon finely grated lemon zest, plus 1/4 cup lemon juice
1/2 teaspoon red pepper flakes
1/4 cup plus 2 tablespoons extra-virgin olive oil
1/2 head savoy cabbage, leaves separated and cut into 2-inch pieces
1/2 cup chopped fresh parsley

Tips:

  • To ensure even cooking, tenderize the pork tenderloin by pounding it gently with a meat mallet or rolling pin. This breaks down the tough fibers and allows the marinade to penetrate more deeply.
  • For a more flavorful marinade, use a combination of acidic (such as lemon juice, vinegar, or yogurt) and flavorful ingredients (such as herbs, spices, or citrus zest). Marinate the pork tenderloin for at least 30 minutes, or up to overnight, to allow the flavors to fully develop.
  • When grilling the pork tenderloin, cook it over medium-high heat for about 10-12 minutes per side, or until it reaches an internal temperature of 145°F (63°C). Use a meat thermometer to ensure accurate cooking.
  • Let the pork tenderloin rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
  • For the corn salad, use fresh, sweet corn kernels and a variety of colorful vegetables. Combine the ingredients in a large bowl and toss with a light vinaigrette dressing. Serve the corn salad immediately.

Conclusion:

Grilled pork tenderloin with corn salad is a delicious and easy-to-make summer meal. The tender and flavorful pork tenderloin pairs perfectly with the sweet and crunchy corn salad. This dish is perfect for a backyard barbecue or a weeknight dinner. With a few simple tips and tricks, you can make this dish even more delicious and impressive.
