Tips:

  • Tenderize the Pork: To ensure tender and juicy medallions, consider using a meat mallet or tenderizing tool to break down the fibers of the pork before grilling.
  • Marinate the Pork: Enhance the flavor of the pork by marinating it for at least 30 minutes in a mixture of olive oil, herbs, spices, and citrus juice. This allows the flavors to penetrate the meat.
  • Grill at Medium-High Heat: Sear the medallions over medium-high heat to create a nice crust, then reduce the heat to medium-low and continue cooking until the internal temperature reaches 145°F (63°C) for medium-rare.
  • Use a Meat Thermometer: To ensure the pork is cooked to your desired doneness, use a meat thermometer to accurately measure the internal temperature of the medallions.
  • Let the Pork Rest: Once the pork is cooked, allow it to rest for a few minutes before slicing and serving. This allows the juices to redistribute, resulting in a more flavorful and tender result.
  • Garnish and Serve: Elevate the presentation of the dish by garnishing it with fresh herbs, lemon wedges, or a drizzle of balsamic glaze. Serve the pork medallions with your favorite pasta, vegetables, or salad.
