GRILLED VANILLA-GINGER PINEAPPLE

Grilled Vanilla-Ginger Pineapple image

Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.

Time 25m

Yield Serves 4

Number Of Ingredients 6

1 large ripe pineapple
1 teaspoon vanilla extract
1/4 cup ginger palm sugar syrup or honey
Pinch of cayenne
1 tablespoon grape seed oil or canola oil
Fresh mint for garnish

Steps:

  • Cut ends off pineapple. Quarter lengthwise, peel and core.
  • Prepare a hot or medium-hot grill. (If you are using the grill after cooking meat or fish, allow residue to burn off and scrape away with a spatula.) Stir together vanilla extract, ginger palm sugar syrup or honey, and cayenne.
  • Brush pineapple wedges lightly with butter or oil and place on grill. Cook for 6 to 8 minutes per side, basting with the syrup, until you see grill marks and the pineapple is lightly colored. Remove to a platter or to plates and brush on remaining syrup or honey. Garnish with fresh mint, and serve warm.

GRILLED PINEAPPLE WITH BASIL AND MINT

Grilled Pineapple With Basil and Mint image

My favorite thing thing to make on the grill is pineapple. Grilling fresh pineapple brings out the sweetness of it. This recipe really takes it up to another level in flavors. It is fancy enough for guest and easy enough to make anytime. I like it with spiced rum too.

Provided by LilPinkieJ

Categories     Dessert

Time 35m

Yield 2 serving(s)

Number Of Ingredients 7

1 medium pineapple
2 tablespoons brown sugar
2 tablespoons unsalted butter, softened
1 tablespoon dark rum
5 fresh mint leaves, finely sliced
10 fresh basil leaves, finely sliced
vanilla ice cream, to serve

Steps:

  • Cut the tops off the pineapples and set aside some of the leaves for garnishing later. Carefully peel of the skin with a serrated knife and cut off the bottoms. Slice into 4, 1 inch thick circles, then with an apple corer, remove the core of each round of pineapple.
  • Together place the brown sugar, butter, mint, basil into a small saucepan and melt together. Bring to the boil for 1-3 minutes or until syrupy then set aside.
  • Heat a griddle until it gets so hot it begins to smoke. With a pastry brush, brush a thin layer of the sauce onto each piece of pineapple and griddle in 2 batches for 4-5 mins on each side or until the pineapple rings are slightly charred.
  • Serve 2 rings per person with a drizzle of the hot sauce and a scoop of vanilla ice cream.

Tips:

  • Choose ripe pineapples: Look for pineapples with a golden yellow color and a slightly sweet aroma. Avoid pineapples that are green or have brown spots.
  • Cut the pineapple properly: Cut the pineapple lengthwise into four quarters, then remove the core from each quarter. Cut each quarter into 1-inch thick slices.
  • Marinate the pineapple: Marinating the pineapple in a mixture of olive oil, lime juice, honey, and spices helps to infuse it with flavor and prevent it from drying out on the grill.
  • Grill the pineapple over medium-high heat: This will help to caramelize the sugars in the pineapple and give it a slightly smoky flavor.
  • Serve the pineapple warm or chilled: Grilled pineapple can be served warm or chilled. If you are serving it warm, brush it with a little melted butter before serving. If you are serving it chilled, let it cool completely before refrigerating it.

Conclusion:

Grilled pineapple is a delicious and versatile dish that can be enjoyed on its own or as a side dish. It is a great way to add a tropical flair to your next cookout or party. With its sweet and smoky flavor, grilled pineapple is sure to be a hit with everyone who tries it.
