Pineapple used to be exotic and expensive, but now it's more common and cheaper. Either way, it's one of my favorite fruits. This recipe was developed by Mark Bittman (the Minimalist) and was published in the New York Times.

Yield Makes 2 1/2 cups

Number Of Ingredients 6

1/2 ripe but firm pineapple, peeled, cored, and cut into 1/2-inch-thick slices
1/4 cup chopped fresh cilantro
1/2 serrano chile, stemmed, seeded, and diced
1 tablespoon fresh lime juice
Pinch of sugar, or to taste
Salt and freshly ground black pepper

Steps:

  • Prepare a grill or grill pan to medium-high heat.
  • Grill the pineapple slices for 2 minutes per side, or until tender and grill-marked. Transfer the slices to a cutting board and chop them. Put the chopped pineapple in a medium bowl and stir in the cilantro, serrano chile, and lime juice. Season the salsa to taste with sugar, salt, and pepper. Serve warm.

Tips:

  • Choose ripe pineapple: Look for pineapple that is golden yellow in color and has a slightly sweet smell. Avoid pineapple that is green or has brown spots.
  • Grill the pineapple properly: Grill the pineapple slices over medium-high heat until they are slightly charred and caramelized. This will bring out the natural sweetness of the pineapple and add a smoky flavor.
  • Use fresh ingredients: Use fresh, ripe ingredients for the best flavor. This includes tomatoes, onions, cilantro, and jalapenos.
  • Adjust the heat level to your taste: If you don't like spicy food, you can omit the jalapenos or use a milder pepper. You can also add more jalapenos if you like a spicy salsa.
  • Serve immediately: Grilled pineapple salsa is best served immediately after it is made. The flavors will meld together as the salsa sits, but it will not be as fresh and flavorful.

Conclusion:

Grilled pineapple salsa is a delicious and refreshing salsa that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. Whether you like it mild, medium, or spicy, there is a grilled pineapple salsa recipe that is perfect for you. So fire up your grill and give one of these recipes a try!
