Tips:

  • Choose the right fish: For this recipe, firm-fleshed fish like salmon, halibut, or cod work best. They can withstand the heat of the grill without falling apart.
  • Make a flavorful pesto: The pesto is what gives this dish its amazing flavor. Be sure to use fresh herbs and good-quality olive oil. You can also add other ingredients to your pesto, such as nuts, sun-dried tomatoes, or roasted peppers.
  • Don't overcook the fish: Fish cooks quickly, so it's important not to overcook it. Otherwise, it will become dry and tough. Cook the fish until it is just opaque in the center.
  • Serve with your favorite sides: This grilled pesto fish is delicious served with a variety of sides, such as roasted vegetables, grilled potatoes, or a simple salad.

Conclusion:

Grilled pesto fish in foil packets is a quick and easy way to cook a delicious and healthy meal. It's perfect for a weeknight dinner or a casual summer gathering. The fish is cooked to perfection in the foil packets, and the pesto adds a ton of flavor. Plus, cleanup is a breeze!
