Fruit on the grill is my new favorite thing. I am not one for pineapple on pizza, but the extra sweetness makes this a win for any occasion. With creamy yoghurt, tart peaches and spicy cayenne, this is a dessert bowl doing all the right things.

4 ripe peaches, halved
juice of half a lemon
1 tablespoon olive oil
4 tablespoons honey
1/2 teaspoon cayenne
2 teaspoons paprika
1 pinch salt
1 1/2 cups Greek yogurt
1/4 mint, finely chopped
1/4 cup slivered almonds
1 teaspoon cinnamon, ground

Steps:

  • In a bowl combine your olive oil, lemon juice and peaches, making sure to give them a coat on all sides.
  • Preheat grill to medium heat and place peaches cut side down. Cooking for 1-2 minutes or until the release easily with a golden jammy texture. Turn over and cook for a further 1-2 minutes.
  • (Depending on the freshness and type of peaches you may need to cook them with the hood down for an extra 5 minutes to see them through, you want them to hold their shape but be soft).
  • In a bowl combine 3 Tbsp of honey, cayenne, paprika and a pinch of salt. In a separate bowl combine the remaining honey, yoghurt and mint.
  • To serve, place a spoonful of yoghurt in a bowl, top with peaches, drizzle with the honey and finish with slithered almonds and cinnamon.

2 cups thick Greek yogurt
1/4 cup honey
1/2 cup torn fresh mint leaves

  • Preheat the grill on the highest setting.
  • Brush the peaches with the olive oil, sprinkle with salt and place on the grill, flesh-side down. Grill for 1 to 2 minutes without moving. Transfer the peaches to a platter and top each half with a large tablespoon of yogurt, drizzle with honey and top with torn mint.
