Time 40m

Number Of Ingredients 11

3 slices thick-cut bacon, diced
1 small Vidalia onion, diced
2 cloves garlic, minced
2 (14.5 ounce) cans diced tomatoes, NOT drained ((see note below to use fresh tomatoes instead))
1 tablespoon sugar
2 teaspoons fresh thyme leaves (or ½ teaspoon dried thyme)
1 dried bay leaf
½ teaspoon apple cider vinegar
½ teaspoon Worcestershire sauce
2 cups fresh or frozen okra, stems trimmed and cut into ½ -inch pieces
Salt and pepper, to taste

Steps:

  • In a large skillet or Dutch oven, cook bacon until the bacon is starting to get crispy and the fat is rendered, about 5 minutes.
  • Add the onion and garlic; saute for 5 more minutes.
  • Stir in tomatoes (with their juices), sugar, thyme, bay leaf, vinegar and Worcestershire sauce. Use the juices from the tomatoes to deglaze the pan, scraping up the browned bits from the bottom. Reduce the heat to low and simmer, uncovered, for 10 minutes.
  • Add the okra, cover with a lid, and simmer, stirring occasionally, until the okra is tender (about 10-12 minutes for fresh okra or 7-8 minutes for frozen okra).
  • Remove the bay leaf. Season with salt and pepper, to taste. Serve immediately.

Time 30m

Number Of Ingredients 6

1/2 cup finely chopped sweet white onion
2 tablespoons olive oil or bacon grease
2 cups chopped fresh okra
3 medium fresh tomatoes, peeled and chopped
Salt
Freshly ground black pepper

Steps:

  • Saute the onion in the oil over medium heat until softened. Add the okra and the tomatoes with all their juice. Cover and simmer over low heat for 15 minutes. Add salt to taste, and simmer, covered, for 5 minutes more. Top with a dash of pepper just before serving.

Tips:

  • Choose fresh, tender okra: Look for pods that are small and firm, with no blemishes or bruises.
  • Trim the okra: Cut off the stem and blossom ends of each okra pod.
  • Soak the okra in cold water for 30 minutes: This will help to remove any bitterness from the okra.
  • Pat the okra dry: Before grilling, pat the okra dry with paper towels to remove excess moisture.
  • Marinate the okra: Toss the okra with olive oil, salt, pepper, and any other desired seasonings. Let the okra marinate for at least 30 minutes, or up to overnight.
  • Grill the okra: Preheat your grill to medium-high heat. Grill the okra for 5-7 minutes per side, or until tender and slightly charred.
  • Serve the okra: Serve the grilled okra immediately with your favorite dipping sauce or as a side dish.
