Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 5

6 nectarines, halved and pitted
Vegetable oil
Maytag blue cheese
Honey
Coarsely ground black pepper

Steps:

  • Heat grill. Brush cut side of nectarine with oil and place on the grill, cut-side down. Grill until caramelized. Turn over and grill for 1 to 2 minutes until almost soft. Place nectarines on a platter, cut-side up and place a dollop of cheese in the center of each nectarine, drizzle with honey and ground fresh pepper over the top.

Tips:

  • Choose ripe, firm nectarines for grilling. Overripe fruit will be too soft and mushy.
  • If you don't have a grill, you can also cook the nectarines in a grill pan over medium heat.
  • Be careful not to overcook the nectarines. They should be slightly caramelized but still have a bit of bite.
  • Use a good quality balsamic vinegar for the glaze. A cheap vinegar will not have the same flavor or consistency.
  • If you are using a soft cheese, such as goat cheese or brie, let it come to room temperature before spreading it on the crostini.
  • Top the crostini with fresh herbs, such as basil or mint, for a pop of flavor.

Conclusion:

Grilled nectarine cheese crostini are a delicious and easy appetizer or snack. They are perfect for summer parties or picnics. The combination of sweet nectarines, tangy balsamic glaze, and creamy cheese is irresistible. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your guests.
