GRILLED ITALIAN SAUSAGE WITH PEPPERS AND ONIONS

Grilled Italian Sausage with Peppers and Onions image

Italian sausage, bell peppers, and onions made easy on the grill. You can also serve the sausage in hot dog buns and finely chop the veggies once grilled as a "relish". I like to add a squirt of mustard when I serve them this way.

FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES

Festival-Style Grilled Italian Sausage Sandwiches image

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

Time 30m

Yield 4

Number Of Ingredients 7

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.

Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. GRILLED SAUSAGE AND POTATO FOIL PACKS

Grilled Sausage and Potato Foil Packs image

Dinner ready in 40 minutes! Serve your family kielbasa and grilled veggies flavored with honey-mustard dressing.

Provided by Betty Crocker Kitchens

Categories     Entree

Time 40m

Yield 4

Number Of Ingredients 4

3 cups frozen potatoes O'Brien with onions and peppers (from 24-oz bag)
3/4 cup honey-mustard dressing
2 cups frozen mixed vegetables (from 1-lb bag)
1 lb ring cooked kielbasa or Polish sausage, cut into 4 pieces

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray foil with cooking spray. Place 1/4 of potatoes and vegetables side by side on center of each sheet. Top each with 2 tablespoons dressing.
  • Make cuts along outside edge of each kielbasa piece at 1/2-inch intervals almost but not completely through other side. Fan kielbasa over potatoes and vegetables. Top each with 1 tablespoon remaining dressing.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal. At this point, packets can be refrigerated up to 24 hours.
  • Place packets, seam side up, on grill. Cover grill; cook over medium heat 20 to 30 minutes, rearranging packets several times during cooking, until potatoes and vegetables are tender.
  • To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape.

GRILLED SAUSAGES, ONIONS AND PEPPERS

Grilled Sausages, Onions and Peppers image

There is no more reliable guest at a cookout than sausage, roasted over the open fire. But before you grill the meat, get some peppers and onions soft and dark and fragrant in the heat, and use these as a bed on which to serve the links. Italian sausage works beautifully here, as do hot links and bratwurst. If cooking brats, think about simmering them first in beer and onions, then finishing them on the fire.

Categories     barbecues, main course

Time 40m

Yield 6 servings

Number Of Ingredients 5

1 pound sweet peppers (green, red and yellow, if available) seeded and cut into eighths
2 large yellow onions, peeled and cut into large coins
3 to 4 tablespoons extra-virgin olive oil, more to taste
1/4 teaspoon salt, more to taste
2 pounds sweet or hot Italian sausages, or bratwurst or other fresh sausage

Steps:

  • Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn all burners to high, lower cover and heat for 15 minutes, then turn burners to medium.)
  • Meanwhile, toss peppers and onions with oil and sprinkle with salt. Lightly prick sausages all over so that they do not burst.
  • Put peppers and onions in a grill basket or directly on the grill, turning occasionally until they are softened and dark at the edges, 10 to 12 minutes. Move them to the side of the grill without coals.
  • Place the sausages on the hot side of the grill, cover and cook, turning occasionally until they are cooked through, 8 to 10 minutes.
  • Transfer the peppers and onions to a platter and top with the sausages. Drizzle with olive oil and serve.

Tips:

  • To ensure even cooking, make sure the sausages are evenly spaced on the grill and turned frequently.
  • If you don't have a grill, you can also cook the sausages in a skillet over medium heat.
  • Be careful not to overcook the sausages, or they will become dry and tough.
  • To check if the sausages are done, insert a meat thermometer into the center of one of the sausages. The internal temperature should be 160 degrees Fahrenheit.
  • Serve the sausages immediately with your favorite sides, such as grilled vegetables, mashed potatoes, or sauerkraut.

Conclusion:

Grilled mustard Italian sausages are a delicious and easy-to-make meal that is perfect for any occasion. With just a few simple ingredients, you can create a dish that is sure to please everyone at the table.
