Time 20m

Yield 6 to 8 servings

Number Of Ingredients 3

1 (8-ounce) package large button mushrooms

4 tablespoons barbecue sauce

Steps:

  • Cut the stems off the mushrooms. Rinse briefly and dry them well with paper towels.
  • Wrap each mushroom with the bacon strip halves. Use 2 if the cap is not completely covered. The bacon will stick to the mushrooms so there is no need for toothpicks.
  • In a medium saute pan over medium-high heat, saute the bacon wrapped mushrooms until the bacon is golden brown. Just as the bacon begins to crisp up a bit, add the BBQ sauce and toss until coated. Serve immediately.

GRILLED MUSHROOMS AND BACON

Grilled Mushrooms and Bacon image

A staple of many tapas bars, and among the most elementary of appetizers, this is a surefire crowd pleaser-as long as your crowd isn't vegetarian. Even if some members are, you can skewer plain mushrooms or mushrooms and other vegetables-like red peppers and zucchini, for example.

Yield makes 4 servings

Number Of Ingredients 3

12 medium button mushrooms, trimmed
About 1/4 pound slab bacon, cut into 12 pieces, or 6 thick slices bacon, cut in half
Vinaigrette (page 600) or Aïoli (page 603)

Steps:

  • Start a charcoal or gas grill or preheat the broiler: the fire should be medium-hot and the grill rack at least 4 inches from the heat source. Make 4 small skewers, alternating mushrooms and bacon. (If you are using sliced bacon, cut the 6 pieces in half, then fold each over onto itself as you skewer it.)
  • Grill, turning frequently, until the bacon is crisp on the outside and the mushrooms tender, 10 to 15 minutes. Serve, offering vinaigrette or aïoli as a dipping sauce.
  • Half of an English breakfast: Put 1 tablespoon extra virgin olive oil in a skillet and turn the heat to medium-high. A minute later, add the mushrooms and bacon and cook, stirring occasionally, until the bacon is crisp and the mushrooms browned and tender, about 10 minutes. Skewer if you like (it's a nicer presentation) and serve.

Tips:

  • Choose the right mushrooms: For grilling, choose firm, meaty mushrooms like portobello, shiitake, or cremini. Avoid delicate mushrooms like oyster or enoki, as they will fall apart on the grill.
  • Clean the mushrooms properly: Gently wipe the mushrooms with a damp cloth to remove any dirt or debris. Do not soak the mushrooms in water, as this will make them soggy.
  • Marinate the mushrooms: Marinating the mushrooms in a mixture of oil, herbs, and spices will help them to flavor and prevent them from drying out on the grill.
  • Preheat the grill: Before grilling the mushrooms, preheat the grill to medium-high heat. This will help to sear the mushrooms and prevent them from sticking to the grates.
  • Grill the mushrooms: Grill the mushrooms for 5-7 minutes per side, or until they are tender and slightly charred. Be careful not to overcook the mushrooms, as they will become tough.
  • Serve the mushrooms: Serve the grilled mushrooms immediately with your favorite dipping sauce or as part of a main dish.

Conclusion:

Grilled mushrooms are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are also a healthy option, as they are low in calories and fat and high in fiber. With a few simple tips, you can grill perfect mushrooms every time. So next time you're firing up the grill, don't forget to add some mushrooms! They're sure to be a hit.
