Once marinated, these pork chops can be cooked any way you like, but for the true experience, you're going to want to cook these on a charcoal grill. For me, it's the smokiness that brings all these flavors together.

1 ½ teaspoons hot sauce
½ teaspoon ground white pepper
½ teaspoon freshly ground black pepper
2 (10 ounce) thick bone-in center cut pork chops

Tips:

  • Tender Pork Chops: Select thick-cut, bone-in pork chops for added flavor and juiciness.
  • Marination Magic: Enhance the pork's flavor with an overnight marinade in a flavorful combination of soy sauce, honey, garlic, ginger, and sesame oil.
  • Grilled Perfection: Grill the pork chops over medium-high heat for a beautiful char and tender interior. Baste with the reserved marinade for extra flavor and moisture.
  • Internal Temperature: Use a meat thermometer to ensure the pork chops reach an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  • Rest for Tenderness: Allow the grilled pork chops to rest for a few minutes before slicing and serving. This helps the juices redistribute, resulting in tender and flavorful meat.

Conclusion:

Grilled Mongolian Pork Chops offer an explosion of flavors with every bite. The tender pork chops, infused with a savory marinade, get a delightful char from the grill. Served with a drizzle of the flavorful marinade, these pork chops are a perfect balance of sweet, salty, and savory. Whether you're grilling for a backyard barbecue or a special occasion, this recipe is sure to impress. The Mongolian-inspired marinade and grilling technique create a dish that is both unique and delicious, making it a must-try for pork chop enthusiasts.
