1 tbsp honey

1/2 tbsp ginger paste or grated fresh ginger
1 chopped green onion
red pepper flakes to taste (optional)
Thinly sliced basil, cilantro leaves, mint leaves, or chopped green onion

Steps:

  • In a large bowl or other container, mix miso paste, honey, rice vinegar, sesame oil, garlic, ginger, green onion and red pepper flakes. Add chicken breasts and stir to coat. Marinate at least 1 hour in the refrigerator.

1/2 cup white miso
2 tablespoons honey
1 tablespoon rice vinegar (do not use seasoned rice vinegar)

8 skin-on, bone-in chicken thighs, approximately 2 1/2 to 3 pounds

  • Heat oven to 425 degrees. Combine butter, miso, honey, rice vinegar and black pepper in a large bowl and mix with a spatula or spoon until it is well combined.

The recipe (with a variety of differences) is readily available, but I tend to go with the most simple versions of things, so this is what we use. The grilling/broiling instructions are a bit vague, but grills are different enough that the operator should use whatever method they think is most reasonable, just keep an eye on it to make sure it doesn't burn. Burnt miso is not a good thing. Prep time includes marinating time.

2 tablespoons sake

2 tablespoons miso, preferably white miso
2 green onions, thinly sliced
1 teaspoon fresh grated ginger

3 pounds of chicken wings
1/2 cup miso
2 tablespoons honey
1 tablespoon rice vinegar
some freshly ground black pepper
a splash of hot water

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 1/2 cup miso, 2 tablespoons honey, 1 tablespoon rice vinegar and some freshly ground black pepper in a large bowl. Whisk, adding a splash of hot water to thin it out, until smooth.
