500 g truss cherry tomatoes
1/2 cup red wine
2 tablespoons extra virgin olive oil
1 tablespoon chopped thyme leaves
1 tablespoon chopped rosemary
coarse grain mustard
2 garlic cloves, crushed

Steps:

  • Place the beef fillet into a non-metal dish.
  • MARINADE. In a jug, combine all ingredients. Season to taste.
  • Pour marinade over beef, turning to coat. Cover and chill for at least 4 hours, or overnight, turning occasionally. Remove from the fridge 30 minutes before cooking.
  • Preheat the flat and grill plate of a covered barbecue on high. Remove meat from marinade. Barbecue for 5 minutes on grill, turning to brown and seal all sides. Transfer to a large heavy-based roasting pan.
  • Turn off the heat on the flat plate and scrape clean. Place the roasting pan on the flat plate. Reduce grill heat to medium, close lid and cook beef for 45 minutes for medium rare. Remove to a board, cover loosely with foil and rest for 15 minutes before slicing.
  • While the meat is resting, place the tomatoes in the roasting pan and cook

1 center-cut beef tenderloin ((about 2 ½ - 3 lbs.))
¼ cup Worcestershire sauce
2 tablespoons molasses
2 tablespoons Dijon mustard
1 tablespoon garlic powder
2 teaspoons kosher salt
1 teaspoon ground black pepper
¼ cup bourbon
¼ cup Dijon mustard
¼ cup packed light brown sugar
Olive oil

Steps:

  • In a small bowl, whisk together Worcestershire sauce, molasses, and 2 tablespoons Dijon mustard.
  • Trim the tenderloin of any excess fat or silver skin. Place the tenderloin in a large zip-top plastic bag and pour marinade over top. Squeeze air out of the bag and seal to close. Gently toss to coat the beef in the marinade. Set the bag on a plate and refrigerate for 8 to 24 hours.
  • In a small bowl, stir together garlic powder, salt, and pepper. Set aside.
  • In a small bowl, whisk together bourbon, ¼ cup Dijon mustard, and brown sugar until the sugar dissolves.
  • After 8 to 24 hours in the refrigerator, remove the tenderloin from the bag and discard the marinade.
  • Wipe excess marinade off of the tenderloin by patting it with paper towels.
  • Press the garlic rub into the tenderloin on all sides and allow to stand at room temperature for 20-30 minutes before grilling.
  • Lightly brush or spray the tenderloin with olive oil.
  • Sear tenderloin over medium direct heat until well marked (about 20 minutes), turning ¼ every 5 minutes. Continue grilling over medium indirect heat until internal temperature reaches 135°F for medium rare (10-20 minutes). During the final 10 minutes of grilling time, turn and baste with the glaze.
  • Remove the tenderloin from the grill and allow to rest for 5-10 minutes (the internal temperature will continue to rise a bit during this time). Cut beef into 1-inch slices and serve warm.
  • Prepare tenderloin according to instructions above. After rubbing the tenderloin with garlic rub, allow to sit at room temperature while you preheat the oven to 475°F.
  • Place tenderloin on a roasting rack and insert a meat thermometer. Roast in the oven until the beef registers an internal temperature of 135°F for medium-rare (about 20-30 minutes). Baste with glaze during the final 10 minutes of baking time.
  • Allow meat to rest for 5-10 minutes before slicing and serving.

Thirty 3-inch rosemary stems, leaves removed from bottom ends
1/4 cup olive oil
1 tablespoon packed light brown sugar

2 teaspoons mustard powder
2 teaspoons ground cumin
1 teaspoon coarse salt
1/2 teaspoon ground black pepper
5 cloves garlic, smashed and chopped 1/4 cup olive oil
2 small limes, juiced
1 cup sour cream
1/3 cup prepared horseradish
2 tablespoons spicy mustard
1/4 teaspoon salt

Steps:

  • For the tenderloin skewers: Cube the meat into 2-inch pieces and skewer with rosemary sprigs. Place in a shallow dish and set aside.

4 steak fillets
1/4 cup balsamic vinegar
4 -5 tablespoons olive oil
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons grainy mustard
1 1/2 teaspoons beef bouillon granules (I use quite a dense stock, so adjust for taste, with what you use.)
1/2 cup water
1 tablespoon sugar (generous)
1 teaspoon cornflour
100 ml sour cream
pepper

Steps:

  • Combine vinegar, oil and mustard's in storage container add steaks and marinate several hours or overnight.
  • Drain beef and reserve marinade. In a medium saucepan add stock, sugar and water to reserved marinade. Heat over medium heat until sugar dissolves. Mix a little water with cornflour and add to sauce, stir until mixture thickens. Keep warm over low heat stirring occasionally. If sauce seems to be getting too thick add a little more water, not to much though, as remember you still have to add the sour cream which will thin it out again.
  • Heat a small amount of olive oil in a pan over med high heat (or grill or BBQ) add the steaks and sear 1-2 minutes each side. Cook for a further 4-5 Min's a side for medium rare. Cooking time will vary depending on the thickness of the meat. Remove steaks and allow to rest.
  • While the steak rests, turn up the heat on the sauce and whisk in sour cream (this will also blend in any mustard that is still a little lumpy.), add pepper to taste.
  • To serve: Place a few spoonfuls of desired mash in the centre of a plate, place steak on top and top with a mound of spinach, drizzle with sauce.

TANGY BEEF OR PORK MARINADE

I created this recipe by fooling around with some ingredients. The result is a wonderful tangy marinade with a bit of a kick that I use on steaks, pork chops, roast pork and even deer meat. This is especially good for a tough cut of meat. I frequently use this for london broil and marinate overnight. If I use for a pork roast, I add more maple syrup to make it sweeter and then baste the pork roast with it when it is cooking in the oven. ETA: You can also use Agave nectar in place of honey or maple syrup as a low glycemic option.

  • Taste for your own taste preferences.
  • It should have a sweet tangy taste.
  • Add garlic, sesame oil and optional red pepper flakes.

  • Pour into ziploc bag, add meat and press out all air.
  • Marinate in fridge for several hours shaking the contents often as the oil will separate.
  • I usually marinate overnight, but a couple hours is fine too.
  • Marinating overnight makes the meat extremely tender and flavorful.
  • The soy sauce measurement is low for our taste preference as we don't like it's salty taste.
  • You can adjust however you wish to your liking.
  • I don't measure any of the ingredients and I add alot of ginger and red pepper flakes because we like the additional kick.

As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.
