3 tablespoons fresh lime juice
3 tablespoons Water
1 small jalapeno pepper, minced
1 tablespoon chopped fresh cilantro

2 cups fresh cilantro leaves
1 cup fresh mint leaves
8 garlic cloves, chopped
1-3/4 teaspoons kosher salt, divided
1/2 teaspoon plus 3/4 teaspoon freshly ground pepper, divided
2 cups olive oil
2/3 cup red wine vinegar
2 tablespoons lemon juice
1/2 teaspoon crushed red pepper flakes
4 pounds beef flat iron steaks or top sirloin steaks (1 inch thick)

  • Place herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a food processor; pulse until herbs are chopped. 4 garlic cloves, minced
1/4 cup olive oil
1 cup red wine vinegar
2/3 cup ketchup
2 tablespoons Worcestershire sauce
2 teaspoons sugar
2 teaspoons dried basil
1 boneless beef chuck steak (1-1/2 inches thick and about 3 pounds)

  • In a small saucepan, saute garlic in oil for 1-2 minutes over low heat until tender; remove from the heat. 1 1/4 lbs boneless beef chuck steaks, 1 inch thick (about 4)
3 tablespoons fresh lime juice
3 tablespoons water
1 tablespoon fresh cilantro leaves, chopped
1 small jalapeno pepper, chopped (seeded if desired to reduce fire)
1 garlic clove, mince (or more to taste)
1/4 teaspoon ground cumin
salt and pepper, to taste
