MARINADE: GRILLED CHICKEN WITH LEMONGRASS & CHILLI

Marinade: Grilled Chicken With Lemongrass & Chilli image

We were on holidays at Surfers Paradise in Queensland Australia. We were out at different restaurants every night. One night we tried Vietnamese. My husband ordered 'Grilled Chicken with lemongrass & Chilli' (Ga nuong xa ot). It was quite a surprise when I sampled his chicken, it was mouth-watering. When we got back home I did some research and attempted to make it. Although I didn't find the exact recipe this version is still yummy. I used chicken thigh fillets instead of breast fillets because the meat is juicer and less fibrous (the restaurant served their dish using thighs). They also used the marinade on Beef, Pork, Prawns, Scallops, Squid, Fish Fillets and Vegetables. To prepare the lemongrass, trim and discard the roots. Use a vegetable peeler to whittle the stalks into thin partial slices. I used half freshly whittled lemongrass and half grated lemon grass. I taste the recipe before I placed the meat in and it's so yummy that I would also use it as a dipping sauce.

Time 2h26m

Yield 4 serving(s)

Number Of Ingredients 10

1/4 cup lemongrass, see above
6 slices lemon zest, strips fresh (optional)
3 garlic cloves, minced crushed
2 -3 shallots, minced
2 red chilies, minced
2 teaspoons light brown sugar (more or less, to taste)
3 tablespoons fish sauce (nam pla)
3 tablespoons lime juice, freshly squeezed
2 teaspoons hot sauce (Vietnamese) or 2 teaspoons Tabasco sauce
1 kg fish fillets or 1 kg vegetables

Steps:

  • Combine all ingredients in a large bowl.
  • To prepare the chicken, cut it 7 cm by 7 cms and cut several small incisions across the chicken to soak up the marinade.
  • Combine marinade and meat (or vegetables) then toss.
  • You can either place it in a zip lock bag or just use a bowl with cling wrap.
  • Refrigerate for about 2 hours, turning occasionally. (I marinated mine overnight).
  • Remove meat from the marinade and grill until cooked and brown. Discard leftover marinade (if there are any of the ingredients left on the meat or vegetables as it may taste bitter if you decide to leave them on).
  • Traditionally it's grilled on an outdoor grill so that the coals are white-hot but I used our barbeque.
  • Serve on a bed of lettuce with Vietnamese fish sauce to dip. Side dish of rice or salad.

Yield Serves 4

Number Of Ingredients 17

3 medium shallots, roughly chopped
2 stalks fresh lemongrass (tough outer leaves removed)
1 piece ginger (about 1 1/2 inches), peeled
1/4 cup plus 5 teaspoons canola oil, divided
1/4 cup fresh lime juice
1 tablespoon tamari (or soy sauce)
2 tablespoons light brown sugar
1 1/2 teaspoons sea salt, plus more to taste
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
4 boneless, skinless organic chicken breasts (about 5 ounces each)
3/4 cup red quinoa
1 1/2 cups chicken broth (or stock)
Vegetable oil cooking spray
1 pound fresh sugar snap peas, strings removed
1 red bell pepper, cored, seeded, and thinly sliced
2 tablespoons chopped fresh mint

Steps:

  • Marinade: Puree shallots, lemongrass, ginger, 1/4 cup oil, lime juice, tamari, sugar, sea salt, pepper, and coriander in a blender until smooth. Place chicken in a baking dish and spoon on marinade, rubbing it on all sides. Cover; chill 1/2 to 2 hours. Heat 2 teaspoons oil in a medium saucepan over medium-high heat. Cook quinoa until toasted, 3 to 4 minutes. Add broth; bring to a boil. Cover, reduce heat to medium-low and simmer until quinoa absorbs liquid, about 20 minutes. Turn off heat; let sit, covered, until ready to serve. Heat a grill pan or skillet over high heat; coat with cooking spray. Cook chicken, turning once, for 4 minutes. Reduce heat to medium. Cook, turning once, until a meat thermometer reads 165 degrees, 10 to 12 minutes. Remove chicken; let rest two minutes. Slice each breast on the diagonal into 1/2-inch pieces. Heat remaining 1 tablespoon oil in a large skillet over medium-high heat. Cook sugar peas and peppers until crisp-tender, about 3 minutes. Season with salt and pepper. Turn off heat. Add mint and toss. Divide quinoa among 4 plates. Top each with 1 sliced chicken breast and 1/4 of the vegetables.

Yield Makes 4 servings

Number Of Ingredients 14

1 cup canned unsweetened coconut milk
3 shallots, chopped
3 garlic cloves
2 lemongrass stalks (bottom third only, tough outer layers removed), finely chopped
2 jalapeños, stemmed
1 1" piece ginger, peeled, chopped
2 tablespoons fresh lime juice
2 tablespoons tamarind juice concentrate (not paste or pulp) or 1 tablespoons fresh lime juice
1 tablespoons fish sauce (such as nuoc nam or nam pla)
2 teaspoons kosher salt
1 teaspoon turmeric
3 pounds whole chicken wings
Vegetable oil (for grill)
Lime wedges

Steps:

  • Combine coconut milk, shallots, garlic, lemongrass, jalapeños, ginger, lime juice, tamarind juice, fish sauce, kosher salt, turmeric, and 1 cup water in a blender. Purée mixture until a smooth marinade forms.
  • Place chicken wings in a large baking dish. Pour marinade over; turn wings to coat evenly. Cover chicken and chill overnight.
  • Remove chicken from marinade, shaking any excess marinade back into dish. Transfer chicken to a large platter. Let stand at room temperature for 15 minutes.
  • Transfer marinade to a large saucepan and bring to a boil over medium heat. Reduce heat to medium-low and simmer, stirring occasionally, until marinade thickens, 10-15 minutes. Pour half of marinade into a small bowl; set aside for basting chicken while it grills. Keep remaining marinade in saucepan; cover and keep warm until ready to serve the chicken.
  • Build a medium fire in a charcoal grill, or heat a gas grill to medium-high. Oil grill grates to prevent sticking. Grill chicken wings, turning every 5 minutes and basting occasionally with marinade in small bowl, until fat is rendered and skin is nicely charred in spots, 30-35 minutes. (The key here is to turn the wings often so the skin doesn't burn.)
  • Continue cooking chicken without basting (so it will get crisp) until wings are cooked through, about 10 minutes longer.
  • Transfer chicken to a large platter and let it rest for 5 minutes. Squeeze lime wedges over wings. Transfer marinade in saucepan to a small bowl. Serve warm marinade alongside chicken as a dipping sauce.

Number Of Ingredients 9

6 large stalks lemongrass
4 teaspoons Asian fish sauce (nam pla)
4 teaspoons soy sauce
4 teaspoons sugar
4 teaspoons minced garlic
1 tablespoon fresh lemon juice
1/4 cup vegetable oil
4 boneless, skinless whole chicken breasts, (about 4 pounds), split
Stir-Fried Garden Vegetables, for serving (optional)

Steps:

  • Brush a grill or grill pan with oil; heat until medium hot. Grill chicken until cooked through and juices run clear when pierced, 3 to 4 minutes on each side. Serve.

GRILLED LEMONGRASS CHICKEN

Categories     Chicken     Quick & Easy

Number Of Ingredients 8

2 tbs finely minced lemongrass
1 tsp fish sauce
2 tsp soy sauce
2 tsp light brown or turbinado sugar
2 tsp minced garlic
Juice of 1/4 lemon (about 1 tbsp)
2 tbsp canola oil
1-1/2 - 2 lbs boneless chicken thighs, lightly pounded to even out thickness

Steps:

  • Combine all marinade ingredients in a mixing bowl, add the chicken, and marinate about 20 minutes. You can marinate up to an hour, but no longer, as the acid in the lemon juice will break down the chicken. Grill for 3-5 minutes per side.

Tips:

  • Choose the right chicken. Bone-in, skin-on chicken breasts or thighs work best for this recipe. The bones and skin help to keep the chicken moist and flavorful as it cooks.
  • Marinate the chicken for at least 30 minutes. This will help the chicken to absorb the flavors of the marinade and make it more tender.
  • Grill the chicken over medium heat. This will help to prevent the chicken from burning and will allow it to cook evenly.
  • Use a meat thermometer to ensure that the chicken is cooked through. The internal temperature of the chicken should be 165 degrees Fahrenheit before you remove it from the grill.
  • Let the chicken rest for a few minutes before serving. This will help the juices to redistribute throughout the chicken and make it more tender.

Conclusion:

Grilled lemongrass chicken is a delicious and easy-to-make dish that is perfect for a summer cookout. The combination of lemongrass, garlic, and ginger gives the chicken a unique and flavorful taste that is sure to please everyone at your table. So next time you're looking for a new grilled chicken recipe, give this one a try. You won't be disappointed!
