EASY SOUR CREAM BAKED SALMON
This easy baked salmon recipe is perfect for a weekday, but could also fill in for a special occasion. The fish is smothered with a mixture of sour cream, mustard, and parmesan cheese. When baking the fish, be careful not to overcook. (There are lots of tricks above in the article for how not to overcook salmon). For moist salmon, bake until the salmon is barely done at the thickest part then remove from the oven cover with foil and let rest.

Steps:
- Heat oven to 425 degrees F. Lightly oil a rimmed baking sheet or baking dish. (Instead of oiling the pan, you could also line with parchment paper).
- In a small bowl, combine sour cream, mustard, and the cheese. Season with salt and pepper to taste.
- Place salmon onto a baking sheet then spread two tablespoons of sour cream mixture on top of each salmon filet.
- Bake 10 to 15 minutes until barely done in the center at the thickest part of the salmon. The center should be firm, but with a small amount of uncooked salmon in the very center. Depending on how thick the salmon is, it may need a few minutes longer. (The internal temperature should be around 125 degrees F).
- Remove from oven then cover lightly with aluminum foil and let rest 5 to 10 minutes. During this time, the salmon will continue to cook.

BROILED SALMON WITH MUSTARD AND LEMON
In this simple salmon recipe, a quick stint under the broiler transforms smooth Dijon mustard into a savory, caramelized crust, and a squeeze of fresh lemon juice adds just the right brightness and tang to the rich, sweet fish. Steps:
- Position one oven rack 6 inches from the broiler heat source then heat the broiler. Season the salmon fillets all over with ½ teaspoon salt and a couple of grinds of pepper and place them on an aluminum foil-lined sheet pan, skin side down.
- In a small bowl, whisk the oil and mustard until well mixed. Brush the tops and sides of the salmon with this mustard mixture.
- Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium-rare. (The center of the fillets will be dark pink, if you pierce one with a paring knife and take a look.) If your fillets are thinner, reduce cooking time by 1 to 2 minutes. If you prefer more well-done fish, add 1 or 2 minutes to the cooking time.
- Squeeze a lemon wedge all over the cooked salmon fillets, then serve salmon with more lemon wedges on the side.

GRILLED SALMON IN FOIL WITH HERBY GARLIC BUTTER
This easy grilled salmon in foil recipe is totally foolproof, resulting in flaky fish with a garlic-herb butter sauce. And did we mention cleanup is a breeze?

Steps:
- Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
- Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
- Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
- Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.
Tips:
- To ensure that the salmon cooks evenly, make sure that the fillets are of uniform thickness. If necessary, use a sharp knife to trim the fillets so that they are all the same thickness.
- When grilling the salmon, place the fillets skin-side down on the grill grates. This will help to prevent the salmon from sticking to the grates and will also help to keep the fish moist.
- Be sure to baste the salmon with the lemon-mustard sauce throughout the cooking process. This will help to keep the fish moist and flavorful.
- To check if the salmon is cooked through, insert a fork into the thickest part of the fish. The salmon is cooked through when the fork comes out easily and the fish flakes easily with a fork.
- Serve the grilled lemon-mustard salmon immediately with the sour cream sauce and your favorite sides.
Conclusion:
Grilled lemon-mustard salmon is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. The salmon is grilled to perfection and then basted with a flavorful lemon-mustard sauce. The sour cream sauce adds a rich and creamy touch to the dish. This dish is sure to be a hit with your family and friends.
