Provided by SushiChick

Number Of Ingredients 7

2 1/2 tablespoons fresh lemon juice
2 tablespoons olive oil (preferably extra-virgin)
2 garlic cloves, crushed
1/2 teaspoon lemon peel, grated
3 tablespoons fresh basil, thinly sliced or 3 teaspoons dried
2 teaspoons drained capers
4 (5-6 ounce) halibut steaks (about 3/4 inch thick)

Steps:

  • Whisk lemon juice, olive oil, crushed garlic cloves and grated lemon peel in small bowl to blend. Stir in 2 tablespoons fresh basil and capers. Season vinaigrette to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature.) Prepare barbecue (medium-high heat) or preheat broiler. Season halibut steaks with salt and pepper. Brush fish with 1 tablespoon vinaigrette, dividing equally. Grill or broil halibut steaks until just cooked through, about 4 minutes per side. Transfer fish to plates. Rewhisk remaining vinaigrette; pour over fish. Garnish fish with remaining 1 tablespoon basil and serve.

Tips:

  • Choose Fresh Halibut: Opt for halibut fillets that are firm to the touch and have a mild, slightly briny aroma. Look for fillets with a pearly white or light pink color and avoid any that appear dull or discolored.
  • Properly Season the Halibut: Before grilling, season the halibut fillets generously with salt and pepper. This will enhance the natural flavors of the fish and help create a delicious crust.
  • Use a Hot Grill: Preheat your grill to a high temperature before cooking the halibut. This will help sear the fish quickly and prevent it from sticking to the grates.
  • Grill the Halibut Skin-Side Down: Place the halibut fillets skin-side down on the hot grill. This will help protect the delicate flesh of the fish and prevent it from falling apart.
  • Cook the Halibut to Perfection: Cook the halibut fillets for 3-4 minutes per side, or until they are opaque throughout and flake easily with a fork. Avoid overcooking, as this will make the fish dry and tough.
  • Make the Lemon-Basil Sauce: While the halibut is grilling, prepare the lemon-basil sauce. Combine olive oil, lemon juice, chopped basil, garlic, salt, and pepper in a small bowl and whisk until well blended.
  • Baste the Halibut with Sauce: Once the halibut is cooked, brush it with the lemon-basil sauce. This will add a burst of flavor and moisture to the fish.
  • Serve Immediately: Serve the grilled lemon-basil halibut immediately with additional lemon wedges and chopped basil. Enjoy the delicious and healthy meal!
