10 bamboo skewers
2 teaspoons vegetable oil, or as needed
3 cups cubed fresh pineapple

Steps:

1 (8 ounce) can pineapple rings, juice drained and reserved
¼ cup brown sugar
¼ cup soy sauce
¼ teaspoon garlic powder
4 pork chops
1 pinch ground black pepper

  • Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. 1/2 cup(s) hoisin sauce
3 tablespoon(s) rice vinegar
2 pound(s) pork chops, 1/2 inch thick
- salt, to taste
- pepper, to taste
3 - scallions, sliced
1/4 cup(s) cilantro, chopped
1 - jalapeno,seeded diced
2 teaspoon(s) ginger, minced

Steps:

  • Brush pineapple all over with 1 tablespoon oil and grill, covered, over hot fire until charred, about 3 minutes per side. Transfer to cutting board. Whisk hoisin and vinegar together in bowl. 4 garlic cloves, coarsely chopped

16 thin pork chops (or 8 regular)
6 green onions
2 tablespoons olive oil (plus a little for brushing)
1 medium pineapple, peeled and diced (or canned)
1 jalapeno pepper, finely chopped
2 tablespoons fresh lime juice
1 tablespoon honey
2 tablespoons cilantro, coarsely chopped
