Steps:
- Preheat the oven to 425 degrees F. Lightly grease a baking sheet with canola oil spray.
- Lay a slice of ham on a work surface. Place a stalk of asparagus perpendicular to the ham, with the tip of the asparagus just higher than the top edge of the ham. Roll the asparagus on a diagonal, tightly wrapping the ham around the stalk as you go. (The ham should cover the entire stalk except for about an inch on the top and bottom ends.) Repeat with the remaining asparagus and ham.
- Place the asparagus, seam-side down, on the prepared baking sheet and lightly grease the tops with canola oil spray. Bake until the ham is crispy and the asparagus has softened and begun to char at the tips, about 15 minutes. Immediately pour the orange juice over the hot asparagus and season with salt. (The orange juice will almost completely evaporate on the hot baking sheet, but it will infuse the asparagus with orange flavor.)
- Transfer the asparagus to a serving plate and garnish with the orange zest. Serve immediately.

EASY HAM AND ASPARAGUS ROLL-UPS
Spargel mit Schinken is one of my husband's favorite German appetizers to prepare, tender asparagus is wrapped in prosciutto ham that has first been spread with seasoned cream cheese. These are always the first snacks to disappear when we entertain, and a favorite of guests! Any leftover prosciutto is also great wrapped around...

Steps:
- 1. Wash and trim asparagus spears - save bottoms for another use if not too woody. Blanch briefly 2 min in boiling salted water and remove stalks to bowl of ice water to stop cooking process and retain crispness/color.
- 2. Cream together cheese, horseradish, sugar, and spices to your personal taste. (Some like it lighter/sweeter and others like the full-on horseradish flavor!) Blend thoroughly with mixer until creamy.
- 3. Drain and dry asparagus spears. Spread cream cheese mixture onto prosciutto slices in moderate layer, then place 2 asparagus spears across the width of ham slice. Roll up asparagus in cream cheese mixture to end of ham strip. Keep refrigerated until served. If you are finicky about uniform appearances, you can slice off the bottom of each with a sharp knife after refrigerating a while for exactly flat and matching edges (cook gets to eat the scraps!). These are colorful, quick and easy, and very unusual snacks to serve as many people have never tasted them before. The sweet, salty, and spicy elements blend together with the savory asparagus to make an explosion of mouth feel and flavor! Always a hit at our house, or when we take them to parties.
THE BEST GRILLED ASPARAGUS
We found that the best way to grill asparagus is to lay it right on the grill grates at an angle--no foil packet or grilling basket necessary. We jazzed ours up with tangy, creamy feta and fresh mint. To get a good char, be sure to use medium-sized asparagus -- no pencil-thin stalks here!

Steps:
- Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
- Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
- Put the asparagus on the grill at an angle so the stalks don't fall through the grates. Grill, flipping halfway through cooking, until the asparagus begin to char, the pointy ends start to crisp and the stalks are just tender, 3 to 5 minutes. Remove to a platter and sprinkle with the feta and mint.

ASPARAGUS SPEARS BAKED IN PARMA HAM
About this recipe: Quick and easy Spanish tapas recipe for asparagus spears, wrapped in Parma ham slices, seasoned and oven baked.
Provided by Matthew James Fisher
Time 20m
Yield Makes 24
Number Of Ingredients 4
Steps:
- Preheat the oven to 200 C / Gas 6. Wash and trim the bottom ends from the asparagus. Boil the Asparagus for 3-4 minutes then drain them and let them cool down.
- Cut each slice of Parma ham in half.
- Wrap each asparagus spear with a half slice of ham.
- Brush a baking tray with olive oil and arrange the wrapped spears in a single layer. Season with salt and pepper.
- Bake in the oven for 10 minutes for thin asparagus, or slightly longer for thick stalks
Tips:
- Choose Thick Asparagus Stalks: Opt for thicker asparagus stalks, as they hold up better during grilling and can withstand the heat without becoming too limp.
- Trim Asparagus Properly: Trim the asparagus stalks by snapping off the woody ends. This ensures that you're left with tender and edible portions of the asparagus.
- Blanch Asparagus (Optional): Blanching the asparagus briefly in boiling water helps retain its vibrant green color and slightly softens it, reducing grilling time.
- Use High-Quality Ham: Choose a good quality, thinly sliced deli ham for wrapping the asparagus. Thicker slices may be difficult to wrap and may not cook evenly.
- Season Ham with Herbs and Spices: Before wrapping the asparagus, season the ham slices with your favorite herbs and spices for added flavor.
- Wrap Asparagus Tightly: Wrap the asparagus stalks tightly with the ham slices, ensuring that the ham completely covers the asparagus. This helps keep the asparagus moist and flavorful during grilling.
- Grill Asparagus Over Medium Heat: Grill the asparagus over medium heat to prevent burning. This allows the asparagus to cook evenly and develop a slight char.
- Baste Asparagus with Marinade: During grilling, baste the asparagus with a simple marinade or olive oil to keep it moist and prevent it from drying out.
- Cook Asparagus Until Tender: Cook the asparagus until it is tender when pierced with a fork, but still retains a slight crunch. Overcooking can make the asparagus limp and mushy.
Conclusion:
Grilled Ham-Wrapped Asparagus is an easy and delicious appetizer or side dish that is perfect for any occasion. With its combination of tender asparagus, flavorful ham, and a hint of smokiness from the grill, this dish is sure to impress your guests.
