GRILLED HAM & PINEAPPLE KABOBS

Number Of Ingredients 7

2.5 lbs Pre-Cooked Boneless Ham, casing removed & large diced
1 Large Fresh Pineapple, peeled, cored & large diced
1/2 cup pineapple or orange juice
1/4 cup soy sauce
1/4 cup brown sugar
1/4 tsp dried ground ginger, or to taste
1-2 Tbsp cornstarch + 1-2 Tbsp COLD water

Steps:

  • Combine juice, soy sauce, brown sugar, & ginger.
  • Marinade ham dices in the mixture at least 2 hours or overnight in the refrigerator; I like to use a ziploc bag to keep mine in & occasionally mix it up by squeezing the ham around in the bag. Drain ham & SAVE marinade.
  • After soaking your skewers in water, alternate your ham & pineapple. Leave a little bit of space between them for more even cooking.
  • Heat marinade in a small saucepan over medium heat. You may add additional brown sugar & ginger to taste, if desired. Wait for mixture to come to a boil & add cornstarch/water slurry. Whisk until boiling & thickened up. Keep warm until ready to grill. This makes a nice thick glaze to add to your kabobs.
  • Grill skewers until heated through & starting to caramelize, basting on both sides with your warm glaze.

1/4 cup hoisin sauce
1/4 cup unsweetened pineapple juice
1/4 cup teriyaki sauce
1 tablespoon honey
1-1/2 teaspoons rice vinegar
1-1/2 teaspoons reduced-sodium soy sauce
KABOBS:
2 pounds fully cooked boneless ham, cut into 1-inch pieces
1 large fresh pineapple, peeled, cored and cut into 1-in. cubes (about 4 cups)

Steps:

  • In a large shallow dish, combine the first 6 ingredients. Add ham; turn to coat. Refrigerate, covered, overnight., Preheat oven to 350°. Drain ham, reserving marinade. For glaze, pour marinade into a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes or until slightly thickened, stirring occasionally. Remove from heat., Meanwhile, on 12 metal or soaked wooden skewers, alternately thread ham and pineapple; place in a foil-lined 15x10x1-in. baking pan. Brush with glaze. Bake, uncovered, 15-20 minutes or until lightly browned.

2 pineapple (cut in cubes)
1 big ham (cut in cubes)
1/2 cup brown sugar
1 (20 ounce) can crushed pineapple

Steps:

  • Place ham and pineapple on skewers. (I did 3 ham and 2 pineapple per skewer.).
  • Mix together crushed pineapple and brown sugar. If to chunky place in blender until smooth.
  • Make sure your grill is nice and hot. Baste kabobs with pineapple and brown sugar mix.
  • Grill until heated and has nice grill marks. Enjoy!

1 cup white vinegar
1/2 cup packed brown sugar
1 pound cubed fully cooked ham
1 pound smoked sausage, cut into 1-in. slices
2 medium sweet potatoes, peeled and cut into 1-inch cubes
1 tablespoon water
2 medium green peppers, cut into 1-inch pieces
1 medium onion, cut into wedges
16 cherry tomatoes
1-1/2 cups pineapple chunks

Steps:

  • In a small bowl, combine vinegar and brown sugar. Pour half of the marinade into a large resealable plastic bag; add ham and sausage. Seal bag and turn to coat; refrigerate for at least 2 hours. Refrigerate remaining marinade for basting., Place sweet potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the ham, sausage, sweet potatoes, green peppers, onion, tomatoes and pineapple. , Grill, covered, over medium heat or broil 4-6 in. from the heat for 8-10 minutes or until sweet potatoes are tender, turning and basting occasionally with reserved marinade.

1/4 cup real maple syrup
1 (20 ounce) can pineapple chunks or use fresh pineapple (our favorite way!)
2 cups of ham chunks - little leftover pieces of ham are perfect for this!
Skewers , metal or wooden
2 cups precooked rice (our favorite is Jasmine)

Steps:

  • GRILLED KABOBS:
  • If using bamboo skewers, soak for 15 - 30 minutes prior to filling with meat and fruit.
  • Prepare grill per grill specifications
  • Using a Kabob skewer, skewer pineapple and ham, alternating between the two.
  • Grill kabobs for 10 - 20 minutes on indirect flame flipping half way through allowing ham and pineapple to caramelize. You may need to do this in batches.
