1 lb green beans, trimmed
2 Tbsp safflower oil (or most any oil that can tolerate high heat)
1 Tbsp red wine vinegar (white balsamic, apple cider vinegar will work as well)
1 stick extra virgin olive oil
1 tsp harissa, to taste (homemade is best!)
pinch salt

Steps:

  • 1. Steam the green beans briefly-about 2-3 minutes. Set aside.
  • 2. Meanwhile, preheat a grill or large grill pan to high.
  • 3. Place the steamed green beans in a large prep bowl and toss with the vegetable oil. Using tongs, arrange the beans in a [single layer] on the grill and cook until lightly charred, about 3-5 minutes.
  • 4. In a small, non-reactive prep bowl whisk together the vinegar, olive oil, harissa (to taste) and salt. Note: I added 2 teaspoons of harissa.
  • 5. Arrange the grilled green beans on a serving platter.
  • 6. Pour the vinaigrette over the green beans. Serve warm or at room temperature. A garnish of fresh parsley (or cilantro) and/or crispy shallots would not be out of place.

2 teaspoons honey
1 tablespoon lime juice (about 1/2 lime)
Kosher salt
2 tablespoons grapeseed or canola oil
1 tablespoon olive oil
1 pound green beans, trimmed
10 ounces grape or cherry tomatoes
1 tablespoon unsalted butter
2 tablespoons roughly chopped mint
Flaky salt for garnish (optional)

Steps:

  • In a bowl, combine harissa, honey and lime juice. Stir together until combined and season to taste with salt.
  • In large cast-iron skillet, heat 1 tablespoon of the grapeseed oil and the olive oil over medium-high heat. Add green beans and cook undisturbed until they began to char in spots, about 3 minutes. Continue to cook, tossing frequently, until beans are just cooked through and slightly blistered and browned in spots, about 5 to 6 minutes more. Some beans will be more cooked than others - that's O.K. Season with salt and place beans in a bowl.
  • Heat remaining 1 tablespoon grapeseed oil in the skillet. Add tomatoes and cook undisturbed until they also begin to char in spots, about 1 minute. Stir tomatoes frequently until they are just cooked through and some begin to burst, about 2 minutes more. They do not need to be totally cooked through. Season with salt.
  • Remove skillet from heat and add green beans. Add harissa mixture and butter and toss until everything is combined and butter is melted. Add in half of the mint and stir again. Spoon into a large bowl and scatter with remaining mint. Garnish with flaky salt, if using.

3 cups green beans cut into 2 to 3-inch pieces
1 1/2 cups carrots julienne, cut into 2 to 3-inch pieces
1 (15-ounce) can garbanzo beans, drained
1 cup cucumber, peeled and diced

1/4 cup lemon juice
1/4 cup olive oil
1/4 cup white wine vinegar

  • Bring a pot of water with a pinch of salt to a rapid boil. While the water heats, fill a large bowl 3/4 full with ice and add enough cold water to just cover ice. Add the green beans, carrots and garbanzo beans to boiling water in small batches to ensure the water does not lose its boil. Boil the vegetables for 3 to 4 minutes, strain and submerge into ice bath as quickly as possible. Remove vegetables from the ice bath as soon as they are no longer warm.
