1 small shallot, minced
1 garlic clove, minced

  • In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. While grilling out, we decided to try grilling fresh green beans. After having this, we will never have green beans another way. I use my own mixture of 'silly salt' for this recipe--equal amounts of pepper, salt, onion powder, and garlic powder, but seasoned salt works as well.

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface to create a double sheet. Repeat with remaining foil to make a total of 4 double sheets.

4 (6 ounce) hanger steaks - fat and silver skin trimmed
1 ½ tablespoons canola oil
salt and pepper to taste
1 pound fresh green beans, trimmed
2 cloves garlic, minced
¼ cup canola oil
salt and pepper to taste
1 cup water
¼ cup white sugar
4 whole shallots
3 fluid ounces port wine
1 cup demi glace
½ cup butter, room temperature

Steps:

  • Lightly cover the steaks with canola oil and season generously with salt and pepper; cover and place in refrigerator until ready to grill.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Place a sheet of aluminum foil on about 1/3 of the grill surface.
  • Bring a large pot of generously salted water to a boil. Cook the green beans in the boiling water until heated through yet still firm, 5 to 7 minutes. Drain. Transfer to a large bowl. Add the garlic and 1/4 cup of canola oil to the green beans and toss to coat. Season with salt and pepper; set aside.
  • Stir the water, sugar, and shallots together in a saucepan until the sugar dissolves; cover the pan and bring the mixture to a boil. Drain the liquid and return the shallots to the pan. Add the port wine and demi glace to the saucepan and place over medium heat; cook until the liquid reduces to about half its original volume. Stir the butter into the mixture until it melts. Remove the pan from the heat. Season with salt as needed. Keep the saucepan covered until the steaks are prepared.
  • Spread the green beans onto the part of the grill prepared with aluminum foil and allow to finish cooking while grilling the steaks.
  • Cook the steaks until they start to firm, and are reddish-pink and juicy in the center, about 2 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Allow the steaks to rest 5 minutes before placing onto individual plates. Spoon the sauce over the steaks. Serve the green beans on the side.

12 fingerling potatoes
1 tablespoon kosher salt
6 tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
2 tablespoons Dijon mustard
1 tablespoon clover honey
Salt and freshly ground black pepper
1 cup extra-virgin Greek olive oil, plus more for drizzling
Canola oil, for grilling
8 ounces feta, crumbled
1/2 cup pitted kalamata olives
2 tablespoons lightly chopped fresh oregano
Fresh parsley leaves, for garnish

Steps:

  • Bring a large pot of salted water to a boil and cook the haricot vert until al dente, about 90 seconds. Shock in ice water, drain well, chop in halves or thirds and reserve.
  • Put the potatoes in a large pot, cover with 2 inches cold water and add 1 tablespoon salt. Bring to a boil and cook until a small knife inserted into the center of the potato meets with some resistance, about 5 minutes. Drain well, place on a baking sheet and let cool slightly. Halve lengthwise.
  • Whisk the vinegar, lemon juice, mustard, honey and salt and pepper. Slowly whisk in the olive oil until emulsified.
  • Heat the grill to medium heat. Toss the potatoes with canola oil and sprinkle with salt and pepper. Grill until golden brown in spots, tossing occasionally, about 5 minutes. Remove and toss with some of the vinaigrette.
  • Combine the potatoes, green beans, feta cheese, olives and oregano in a bowl. Toss with more of the vinaigrette, taste and season with salt and pepper if necessary. Scatter the parsley leaves over the top and drizzle with a bit more olive oil.

1 pint cherry tomatoes
3 cloves garlic, smashed
2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling
2 tablespoons red wine vinegar
1/4 cup chopped fresh dill

Steps:

  • Cover one side of a grill with a large sheet of foil; fold up the edges to make a rimmed tray. Preheat the grill to medium high. 1 small onion, sliced
2-4 slice bacon cut into quarters (low sodium or turkey)
4 medium mushrooms, sliced

  • 1. Slice onions and mushrooms and cut bacon slices into quarters. Prep the green beans.

1 tablespoon brown sugar
1 tablespoon sesame oil
1 tablespoon reduced sodium soy sauce
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 1/2 lbs fresh green beans, trimmed
1 medium red onion, halved and thinly sliced
6 medium fresh mushrooms, quartered

Steps:

  • In a large bowl, combine the first five ingredients. Add the beans, onion and mushrooms; toss to coat.
  • Place half of the vegetables on a double thickness of heavy-duty foil (about 18 inches square); fold foil around vegetables and seal tightly. Repeat with remaining vegetables.
  • Grill, covered, over medium heat for 18-22 minutes or until beans are tender, turning packets over several times to get an even coating of the sauce on all the vegetables. Open foil carefully to allow steam to escape.

Sunny's Easy Grilled Green Beans with a Quick Chutney image

1/2 cup apricot preserves
1/4 cup finely chopped Chicago-style mild giardiniera sandwich mix (the kind packed in vinegar)
1/4 cup finely chopped red bell pepper
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh Italian parsley
2 tablespoons chopped fresh mint
16 to 18 ounces green beans, trimmed
Kosher salt and freshly ground black pepper

Steps:

  • For the chutney. In a small sauce pot on medium heat, add the preserves, giardiniera, bell pepper, vinegar, a pinch of salt and a few grinds of pepper. Add a splash of water to loosen and bring to a simmer. Simmer, stirring occasionally, until the bell pepper becomes tender, about 10 minutes. Remove from the heat and stir in the parsley and mint.
  • For the green beans. Prepare a grill for high heat and place an inverted wire resting rack on top of the grill.
  • Place the green beans in a single layer on top of the wire rack and close the grill lid. Grill, rotating midway through, until bright green, 5 to 8 minutes.
  • Transfer the grilled green beans to a large bowl, toss with the chutney, season with salt and pepper and serve.

GRILLED GREEN BEANS WITH BACON VINAIGRETTE

1 1/4 pounds green beans, trimmed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 medium red onion, sliced (about 2/3 cup)
2 slices bacon
1 tablespoon whole-grain mustard
1 tablespoon white wine vinegar

Steps:

  • Preheat a grill over medium-high heat. Lay 2 sheets of aluminum foil, about 14 inches long, on top of each other and crimp the edges together and up slightly so it resembles a rimmed baking sheet. Put the beans in the center and toss with 1 tablespoon of the oil, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Place the foil baking sheet on the grill and add 2 tablespoons water. Grill the beans, tossing with long tongs occasionally, until lightly charred and softened, about 10 minutes. Add the onions and another 2 tablespoons of water and continue to grill until the beans and onions are tender, another 6 to 7 minutes.
  • While the beans grill, cook the bacon in a small skillet over medium heat until crispy; transfer to a paper-towel-lined plate to drain. Pour off the bacon drippings, leaving about a tablespoon in the skillet. Remove the skillet from the heat and immediately stir in the mustard, vinegar and remaining 1 tablespoon oil until combined.
  • Transfer the beans and onions to a bowl and add the vinaigrette from the skillet. Toss well, crumble the bacon over top and serve.

2 teaspoons vegetable oil
1 tablespoon red wine vinegar
1 tablespoon extra virgin olive oil
1 teaspoon harissa

Steps:

  • Preheat a grill or large grill pan to high.
  • Prepare a large bowl of ice water; set aside. Fill a large saucepan halfway with water and bring to a boil over high heat. Season the water generously with salt. Add the beans and blanch until just crisp-tender, 2 to 4 minutes.
  • Drain, and plunge the beans into the ice water for 2 minutes to stop the cooking. Drain the beans and pat dry with kitchen towels.
