Provided by Food Network Kitchen

Time 20m

Yield 4 servings

Number Of Ingredients 11

3 ounces thinly sliced prosciutto
3 tablespoons extra-virgin olive oil
2 tablespoons sherry vinegar
1 teaspoon dijon mustard
Kosher salt and freshly ground pepper
2 peaches, pitted and sliced 1/2-inch thick
2 plums, pitted and sliced 1/2-inch thick
1/4 cup thinly sliced red onion
8 cups torn mixed salad greens
2 to 3 ounces crumbled gorgonzola (or other blue cheese)
4 slices Italian bread, toasted or grilled

Steps:

  • Cut or tear the prosciutto into bite-size pieces. Place a large skillet over medium-high heat; add 1 tablespoon olive oil. Add the prosciutto in a single layer (you may need to do this in two batches); cook, turning occasionally, until crisp, about 1 minute per side. Drain on a paper-towel-lined plate.
  • Add the remaining 2 tablespoons olive oil to the skillet over medium-high heat. Whisk the vinegar, mustard, 1/2 teaspoon salt, and pepper to taste into the oil to make a smooth dressing. Add the peaches, plums and red onion to the skillet; toss to coat and wilt the onion slightly. Transfer the mixture to a large serving bowl.
  • Add the greens and half of the gorgonzola to the bowl; toss to coat with the dressing. Divide the salad among plates; top with the crisp prosciutto and the remaining gorgonzola. Serve with the bread.

Yield Makes 4 servings

Number Of Ingredients 9

6 tablespoons olive oil
10 large garlic cloves, unpeeled
2 tablespoons honey
2 tablespoons apple cider vinegar
2 tablespoons apple cider
1 tablespoon Dijon mustard
8 cups bite-size pieces romaine lettuce (1 large head)
1 cup crumbled Gorgonzola cheese
Spiced Pecans

Steps:

  • Preheat oven to 350°F. Toss oil with garlic in small baking dish. Cover dish tightly with foil. Bake until garlic is golden and tender, about 45 minutes. Cool. Squeeze garlic from skins. Reserve oil.
  • Transfer roasted garlic to processor. Add honey, vinegar, cider and mustard and blend well. With processor running, slowly add reserved garlic oil. Season dressing to taste with salt and pepper.
  • Toss lettuce with 1/2 cup Gorgonzola cheese and enough dressing to coat. Sprinkle with remaining 1/2 cup cheese and Spiced Pecans and serve.

Tips:

  • For the best flavor, use ripe, seasonal fruit.
  • If you don't have a grill, you can also roast the fruit in the oven at 400 degrees Fahrenheit for about 15 minutes, or until lightly charred.
  • Be careful not to overcook the fruit, as it will become mushy.
  • If you're using a soft cheese, such as Gorgonzola or goat cheese, let it come to room temperature before serving so that it's easier to spread.
  • A drizzle of balsamic vinegar or honey can add a nice touch of sweetness and acidity to the salad.
  • For a more substantial salad, add some grilled chicken, shrimp, or tofu.

Conclusion:

Grilled fruit salad is a refreshing and flavorful dish that's perfect for summer gatherings. The combination of sweet fruit, tangy cheese, and nutty walnuts is sure to please everyone at your table. Whether you're serving it as a side dish or a main course, this salad is sure to be a hit.
