GRILLED FRUIT AND VEGETABLE KABOBS

Time 45m

Yield 8 skewers

Number Of Ingredients 9

2 large red bell peppers, cut into 2-inch pieces
1 large pineapple, peeled and cut into 2-inch pieces
1 large red onion, cut into 2-inch pieces
Olive oil, for drizzling
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon cumin
Juice of 1 lime
1/2 bunch fresh cilantro chopped

Steps:

  • Heat a grill pan over medium-high heat.
  • For the kabobs: Thread 1 piece of red pepper, 1 piece of pineapple and 1 piece of red onion on a metal skewer. Repeat the process until you reach the end of the skewer. Continue with the remaining fruit, vegetables and skewers.
  • Drizzle the grill pan with olive oil and grill the kabobs until all sides have char marks, 3 minutes on each side, 12 minutes total.
  • For the honey-lime vinaigrette: Add the olive oil, honey, cumin, lime juice and cilantro to a small bowl and mix until combined. Drizzle the vinaigrette over the grilled kabobs.

Tips:

  • Choose firm fruits and vegetables: Softer fruits and vegetables, such as berries and tomatoes, are more likely to fall apart on the skewers. Choose firm fruits and vegetables that will hold their shape well when grilled, such as pineapple, mango, zucchini, and bell peppers.
  • Cut fruits and vegetables into uniform pieces: This will ensure that they cook evenly. For smaller items, such as cherry tomatoes or grapes, you can leave them whole.
  • Soak wooden skewers in water for at least 30 minutes before using: This will help to prevent them from burning on the grill.
  • Brush the skewers with oil before grilling: This will help to prevent them from sticking to the grill grates.
  • Grill the skewers over medium heat: This will help to prevent the fruits and vegetables from burning. Cook the skewers for 8-10 minutes, or until the fruits and vegetables are tender and slightly charred.
  • Serve the skewers hot or cold: Grilled fruit and vegetable kabobs are delicious served hot off the grill, or you can let them cool and serve them cold. You can also drizzle them with a sauce of your choice, such as a balsamic glaze, honey mustard, or tahini sauce.

Conclusion:

Grilled fruit and vegetable kabobs are a delicious and healthy way to enjoy your favorite fruits and vegetables. They are perfect for summer cookouts, potlucks, or just a simple weeknight meal. With a variety of fruits and vegetables to choose from, you can create kabobs that are tailored to your own taste preferences. So fire up the grill and enjoy this tasty and versatile dish!
