CEDAR PLANK-GRILLED SALMON WITH CILANTRO PESTO

Cedar Plank-Grilled Salmon with Cilantro Pesto image

Provided by Food Network

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 12

4 (6 to 8-ounce) portions salmon preferably local wild King salmon -skin on or off
Olive oil, to taste
Salt
Fresh cracked pepper
Cilantro Pesto, recipe follows
1 cup extra-virgin olive oil
1 cup roughly chopped cilantro leaves
1 clove garlic
1/4 cup pepitas (pumpkin seeds) lightly toasted
1/2 lime, juiced
Jalapeno, to taste
Salt and pepper

Steps:

  • This recipe is for OUTSIDE gas or charcoal plank-grilling.
  • For the Cedar Planks: I use UNTREATED 1 by 8 construction grade cedar cut to the length of the amount of salmon you wish to cook. (I cut mine in 10-inch lengths for 2 (8- ounce fillets)
  • Soaking the planks: Pre-soak cedar planks for at least 1 hour, preferably longer or overnight. Weigh down planks with heavy cans or stones to completely submerge the wood in water.
  • Lightly coat the salmon with olive oil and season with salt and pepper. Place salmon on cedar plank skin-side down.
  • Turn on your gas grill to high heat. Place planks (loaded up with salmon) on the grill and close lid. Your grill will now turn into an oven/smoker. Cooking time required will vary depending on the size of the salmon. Be careful when you are lifting the grill lid because the burning plank will produce a lot of smoke. Try to keep the lid closed as much as possible as not to lower the temperature inside the grill. When salmon is cooked, remove fish from plank and plunge wood into a bucket of cold water. Serve the salmon immediately with the Cilantro Pesto.
  • Place first 4 ingredients in blender or small food processor and completely puree. Add lime juice, jalapeno, and salt and pepper, to taste.

Yield Makes 4 servings

Number Of Ingredients 11

1/4 small white onion, finely chopped
1/2 cup finely chopped fresh cilantro
1/4 cup fresh lime juice
1 teaspoon grated peeled ginger
1 teaspoon sugar
1/2 cup finely chopped fresh mint plus 4 sprigs for stuffing
2 red chiles (such as Fresno or serrano), with seeds, thinly sliced, divided
1/3 cup plus 1 tablespoon vegetable oil
Kosher salt
2 whole branzino or small red snapper, cleaned
1 lime, thinly sliced

Steps:

  • Prepare grill for medium-high heat. Mix onion, cilantro, lime juice, ginger, sugar, chopped mint, half of chiles, and 1/3 cup oil in a medium bowl; season with salt. Set relish aside.
  • Season inside of fish with salt. Stuff with mint sprigs, lime slices, and remaining chiles; tie with kitchen twine. Drizzle with remaining 1 tablespoon oil; season with salt. Grill fish until skin is crisp and flesh is flaky and opaque down to the bone, about 5 minutes per side. (If a small knife slides easily through the thickest part of flesh, the fish is done.) Serve with relish.
  • DO AHEAD: Fish can be stuffed and tied and relish can be made 6 hours ahead. Cover separately and chill.

GRILLED FISH WITH CILANTRO CHUTNEY IN BANANA LEAVES

Grilled Fish with Cilantro Chutney in Banana Leaves image

Categories     Food Processor     Fish     Ginger     Quick & Easy     Backyard BBQ     Dinner     Coconut     Mint     Hot Pepper     Summer     Grill     Grill/Barbecue     Cilantro     Gourmet     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 6 (main course) servings

Number Of Ingredients 15

For chutney
1 (1- by 1 1/2-inch) piece fresh ginger, peeled
5 garlic cloves
1 fresh hot green chile such as jalapeño or serrano, trimmed
1/2 cup chopped fresh coconut (see how to crack and peel fresh coconut )
3 cups fresh cilantro sprigs
1/3 cup fresh mint leaves
1/4 cup white-wine vinegar
1 teaspoon sugar
1/4 teaspoon salt, or to taste
For fish
1 (1-pound) package frozen banana leaves, thawed
6 (6-ounce) pieces white fish fillet (1 inch thick) such as wahoo, cod, or halibut
Special Equipment
kitchen string

Steps:

  • Prepare grill.
  • Make chutney:
  • Finely chop ginger, garlic, chile, and coconut in a food processor. Add cilantro and mint and process until chopped. Add vinegar, sugar, and salt and blend chutney well.
  • Prepare fish:
  • Cut banana leaves into 6 sheets (12 by 10 inches each). Arrange in a stack with a short side nearest you.
  • Season fillets on both sides with salt and pepper. Spread 1 slightly rounded tablespoon cilantro chutney on top of a fillet, then invert onto center of a banana leaf, arranging fillet crosswise. Spread another slightly rounded tablespoon of chutney on top of fish. Fold bottom edge of leaf over fish and fold in sides over fish, then fold package away from you, enclosing fish. Tie package (in both directions) with a 24-inch piece of kitchen string. Repeat with remaining fillets, chutney, and banana leaves.
  • Grill fish, turning over once, until cooked through, 8 to 10 minutes (untie 1 package to check doneness). Cut string before serving and transfer packages to 6 plates. The banana leaves are inedible, but we think they make a nice presentation.

Tips:

  • Choose the freshest fish possible: Fresh fish will have a mild, briny smell and firm, elastic flesh. Avoid fish that smells fishy or has soft, mushy flesh.
  • Use a variety of herbs and spices: Herbs and spices add flavor and complexity to grilled fish. Some good options include cilantro, mint, basil, oregano, thyme, rosemary, garlic, and lemon zest.
  • Don't overcook the fish: Grilled fish should be cooked until it is opaque and flakes easily with a fork. Overcooked fish will be dry and tough.
  • Serve the fish with a simple sauce or marinade: A simple sauce or marinade can help to enhance the flavor of the fish. Some good options include a cilantro-mint pesto, a lemon-herb butter, or a garlic-herb sauce.

Conclusion:

Grilled fish is a healthy and delicious meal that can be enjoyed by people of all ages. By following these tips, you can ensure that your grilled fish is perfectly cooked and full of flavor. So next time you're looking for a quick and easy meal, give grilled fish a try!
