Cooking spray
1 cup Old El Paso™ fat-free refried beans (from 16-oz can)
1/2 cup diced bell pepper, any color
1 small tomato, seeded, diced
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 1/2 cups shredded taco-seasoned cheese blend (6 oz)

Steps:

  • Heat gas or charcoal grill. Lightly spray one side of each tortilla with cooking spray. On unsprayed side of each of 4 tortillas, spread 1/4 cup beans. ½ cup corn (canned or frozen)
¾ cup black beans (drained and rinsed)
1 cup enchilada sauce
4 large flour tortillas
1 cup Monterey Jack cheese
¼ cup cilantro (fresh, chopped)
4 green onions (chopped)

Steps:

  • Preheat your oven to 425 F degrees.
  • In a medium size bowl add the shredded chicken, corn, black beans, enchilada sauce and toss everything well.
  • Take a large tortilla and add about 1/4 of the chicken and spread it over half of the tortilla. Sprinkle with 1/4 of Monterey Jack cheese. Garnish with cilantro and green onions. Fold in half and press down gently. Repeat with the remaining ingredients.

1 (19 ounce) can kidney beans, rinsed and drained
1 cup salsa
4 green onions, chopped
1/4 cup green olives, chopped
