GRILLED ASPARAGUS WITH CAPER-CORNICHON VINAIGRETTE

Grilled Asparagus with Caper-Cornichon Vinaigrette image

Inspired by gribiche, the French sauce traditionally served with steamed asparagus, this salad takes a modern approach by grilling the spears then piling them on a platter with sliced hard-cooked eggs. The mustard vinaigrette, chock-full of cornichons and capers, preserves all the briny goodness of the original sauce.

GRILLED EGGPLANT SALAD

Here is a deeply flavored salad that can be prepared entirely outdoors, keeping the heat out of the kitchen. Grill a whole fat purple globe eggplant until the skin blisters. Then scrape the soft insides into a bowl and season them with red wine vinegar, garlic, good olive oil and fresh herbs. A few capers on top add a pleasing brininess. Serve it with pita bread, a good rosé and a hunk of feta, and want for nothing more.

Yield Serves 4 (main course) or 8 (first course or side dish)

Number Of Ingredients 8

1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 teaspoon minced garlic
2 teaspoons chopped marjoram or oregano
1 (1 1/4-pounds) eggplant, trimmed and cut into 8 (1-inch-thick) rounds
10 ounces baby spinach
1 cup crumbled feta (1/4 pound)
1/4 cup pine nuts (1 ounce), lightly toasted

Steps:

  • Prepare grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure .
  • Whisk together oil, lemon juice, garlic, marjoram, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small bowl.
  • Brush both sides of eggplant slices with some of dressing. Season with 1/4 teaspoon each of salt and pepper. Oil grill rack, then grill eggplant, covered only if using a gas grill, turning occasionally, until tender, 12 to 15 minutes total. Cut into pieces.
  • Toss spinach with enough dressing to coat and season with salt and pepper. Add eggplant, feta, and pine nuts and toss again.

Tips:

  • Choose fresh, tender vegetables: Look for eggplants and asparagus that are firm and have no blemishes. The eggplants should be deep purple in color, and the asparagus should be bright green.
  • Use a grill brush to clean your grill grates: This will help to prevent the vegetables from sticking.
  • Grill the vegetables over medium-high heat: This will help them to cook evenly and prevent them from burning.
  • Turn the vegetables frequently: This will help them to cook evenly and prevent them from burning.
  • Let the vegetables cool slightly before serving: This will make them easier to handle and will help to preserve their flavor.

Conclusion:

Grilled eggplant and asparagus salad is a delicious and healthy side dish or main course. The vegetables are grilled to perfection and tossed with a simple vinaigrette dressing. This salad is perfect for summer cookouts or potlucks.
