3 slices fresh ripe pineapple

1 clove garlic, finely chopped
2 tbsp olive oil

  • Marinate ribs in a large plastic zip bag with the italian dressing for at least one hour. Preheat grill to approximately 400. Slice the lower 2 inches off the fresh pineapple, slice off from remaining fruit three 1/2" slices. Core/skin them, then grill for approx. 5 minutes per side. 1 1/2 Tbsp light brown sugar
1 Tbsp coarse sea salt (or less!)
1/2 Tbsp ground ancho chili powder
1/2 Tbsp ground new mexico chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder

2 1/2 lb country ribs

  • 1. In a small bowl, measure and blend together all the seasonings. Rub into all surfaces of country ribs. Put into resealable bag or dish covered with plastic wrap. Refrigerate for 8 hours or overnight. (Less time will work, flavors won't be as intense)

1 Tablespoon honey
