5 ears fresh corn (husked with silks removed)
1 1/2 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
3/4 teaspoon black pepper
1 pint halved cherry tomatoes (about 2 cups)
2 cups packed arugula
1 medium avocado (peeled, pitted, and diced)
1 small red bell pepper (cored and finely chopped)
4 green onions (finely chopped)
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice (from about 2 limes)
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1 teaspoon paprika
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder

Steps:

1 pint grape tomatoes
1 ripe avocado
2 ears of fresh sweet corn
2 tbsp fresh cilantro, chopped
HONEY LIME DRESSING
Juice of 1 lime
3 tbsp vegetable oil
1 tbsp honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash of cayenne pepper

  • Remove husks from corn and grill over medium heat for 10 minutes. The corn should have some brown spots and be tender and not mushy. 1 pint grape tomatoes
1 ripe avocado
2 ears fresh sweet corn
2 tablespoons fresh cilantro, chopped
1 lime, juice of
3 tablespoons vegetable oil
1 tablespoon honey
1 garlic clove
1 dash cayenne pepper
sea salt
fresh cracked black pepper

Steps:

  • Grill corn for 10 minutes. Cut the corn off the cob and cool.
  • Slice tomatoes in half.
  • Dice the avocado.
  • Chop the cilantro.
  • Whisk remaining ingredients in small bowl and set asid.
  • Combine corn, avocado, tomatoes and cilantro. Toss with honey lime dressing. Let rest 15 minutes.
