Here's what you need: salmon fillets, olive oil, salt, pepper, lemon, lemons, garlic, fresh rosemary, fresh thyme, asparagus, fresh parsley

Provided by Claire Nolan

Categories     Dinner

Yield 2 servings

Number Of Ingredients 11

2 salmon fillets
¼ cup olive oil
salt, to taste
pepper, to taste
1 lemon, juiced
2 lemons, sliced
2 cloves garlic, minced
3 sprigs fresh rosemary
1 sprig fresh thyme
1 lb asparagus
fresh parsley, to garnish

Steps:

  • In a resealable bag or dish, add salmon, olive oil, salt, pepper, juice of one lemon, minced garlic, one thyme sprig, and one rosemary sprig.
  • Seal, mix marinade around, being careful not to bruise the fish, and allow to marinate in the refrigerator for at least one hour.

Tips:

  • Choose the right salmon: For the best results, use a fresh salmon fillet that is about 1 inch thick. If you are using frozen salmon, thaw it completely before cooking.
  • Prepare the salmon: Before grilling, pat the salmon dry with paper towels. This will help to prevent the salmon from sticking to the grill grates.
  • Season the salmon: Season the salmon with salt, pepper, and any other desired spices. You can also add a squeeze of lemon juice or a drizzle of olive oil.
  • Grill the salmon: Preheat your grill to medium-high heat. Place the salmon fillets on the grill grates and cook for 6-8 minutes per side, or until the salmon is cooked through. The salmon is cooked through when it flakes easily with a fork.
  • Prepare the asparagus: While the salmon is cooking, prepare the asparagus. Trim the ends of the asparagus and cut them into 2-inch pieces. Toss the asparagus with olive oil, salt, and pepper.
  • Grill the asparagus: Once the salmon is cooked, remove it from the grill and set it aside. Add the asparagus to the grill grates and cook for 3-4 minutes, or until the asparagus is tender-crisp.
  • Serve the salmon and asparagus: Serve the grilled salmon and asparagus immediately, with lemon wedges and your favorite dipping sauce.

Conclusion:

This grilled citrus salmon and asparagus recipe is a delicious and healthy meal that is perfect for a weeknight dinner. The salmon is cooked to perfection and the asparagus is tender-crisp. The citrus marinade gives the salmon a bright and refreshing flavor. This recipe is sure to please everyone at your table.
