GRILLED CASHEW CHICKEN WRAPS

GRILLED CASHEW CHICKEN WRAPS image

Categories     Bread     Chicken     Nut     Quick & Easy     Lunch     Orange     Summer     Grill/Barbecue

Yield 6 Servings

Number Of Ingredients 12

6 Rhodes Dinner Rolls, thawed to room temperature
3-4 cups shredded cooked chicken
1/2 cup mayonnaise
2 teaspoons rice vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon Dijon mustard
1/4-1/2 cup cashews
3 tablespoons sliced green onions
1/2 cup mandarin oranges, divided
1/4 cup finely chopped red cabbage
salt & pepper to taste

Steps:

  • Spray counter lightly with non-stick cooking spray. Roll each dinner roll into an 8 inch circle. Cover with plastic wrap and let rest for about 20 minutes. In a large bowl, combine the chicken, mayonnaise, vinegar, sugar, sesame oil and mustard. Fold in the cashews, green onions, half of the oranges and the cabbage and mix well. Salt and pepper to taste. Remove wrap from flattened rolls and brush with olive oil. Cook on a grill heated to medium heat for about 1 minute on each side. Remove from grill and cool slightly. Divide chicken mixture evenly between the wraps and garnish with remaining oranges.

Tips:

  • Choose the right chicken: Use boneless, skinless chicken breasts or thighs for best results. Chicken tenderloins can also be used, but they will cook more quickly so be careful not to overcook them.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of olive oil, herbs, and spices will help to keep it moist and tender while it cooks.
  • Cook the chicken properly: Grilled chicken should be cooked to an internal temperature of 165 degrees Fahrenheit. Use a meat thermometer to ensure that the chicken is cooked through.
  • Use fresh vegetables: Fresh vegetables will add flavor and texture to your wraps. Choose vegetables that are in season and that you enjoy.
  • Don't overload the wraps: Be careful not to overload the wraps with too many fillings, or they will be difficult to eat. Aim for a balance of flavors and textures.
  • Serve immediately: Grilled chicken wraps are best served immediately after they are made. The tortillas will become soggy if they sit for too long.

Conclusion:

Grilled chicken wraps are a delicious and easy meal that can be enjoyed for lunch or dinner. They are also a great way to use up leftover chicken. With endless possibilities for fillings and variations, you can easily customize grilled chicken wraps to suit your own taste. So next time you are looking for a quick and healthy meal, give grilled chicken wraps a try!
