1/2 teaspoon hot red pepper flakes
1 piece fresh ginger (1 inch), peeled and sliced thin
2 garlic cloves , chopped coarse

4 1/2 pounds bone-in, skin-on chicken pieces

FOR THE GLAZE: Process peanut butter, coconut milk, cilantro, honey, lime juice and zest, water, fish sauce, hot red pepper flakes, ginger, garlic, and curry powder in food processor untilthoroughly combined, 20 to 30 seconds, scraping down sides of workbowl as needed. Grill chicken until instant-read thermometer inserted into thickest part registers 155 degrees for breasts and 170 degrees for legs or thighs. 3. 3/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
1 medium onion, chopped (1/2 cup)
1/3 cup peanut butter
1/4 cup chili sauce
1/2 teaspoon ground red pepper (cayenne)
1 cup water
1/4 cup chopped salted peanuts
1/4 cup chopped red bell pepper

Steps:

  • Sprinkle chicken with salt and pepper.
  • Heat oil in 12-inch skillet or 4-quart Dutch oven over medium heat. Cook chicken in oil about 15 minutes, turning occasionally, until brown on all sides. 1/2 cup orange juice
1/4 cup peanut butter
1 tablespoon curry powder
1 lb boneless skinless chicken breast, cut into strips
1 medium bell pepper, cut into 1/2-inch strips (Use a red or orange for added color and appeal.)
1/2 cup shredded coconut, toasted
1/2 cup golden raisin
cooked rice

Steps:

  • Put the orange juice, peanut butter and curry powder in blender container; blend until smooth.
  • Place the chicken strips in a medium bowl, pour the orange juice mixture all and stir to combine.
  • Cover the chicken and place in refrigerator for 1 hour.
