Tips:

  • Use ripe mangoes: For the freshest, most flavorful salsa, use ripe mangoes. They should be slightly soft to the touch and have a sweet, tropical aroma.
  • Choose the right chicken: For this recipe, boneless, skinless chicken breasts or thighs work best. You can also use chicken tenders or strips if you prefer.
  • Marinate the chicken: Marinating the chicken in a mixture of olive oil, garlic, cumin, and chili powder will help to infuse it with flavor and make it more tender.
  • Grill the chicken over medium heat: This will help to prevent the chicken from drying out. If you are using a gas grill, preheat it to medium-high and then reduce the heat to medium before grilling the chicken.
  • Serve the chicken with mango salsa: The mango salsa is the perfect complement to the grilled chicken. It is fresh, flavorful, and adds a pop of sweetness and acidity.
