GRILLED CHICKEN WITH CILANTRO MARINADE

Grilled Chicken With Cilantro Marinade image

Definitely make this grilled chicken at your summer cookouts. After marinating, the slow cooked chicken legs are moist and juicy. The marinade is slightly sweet from the brown sugar with a bold, spicy flavor from the mustard. You'll definitely taste the jalapeno flavor but it doesn't add any heat to the chicken.

Time 1h45m

Number Of Ingredients 7

12 chicken drumsticks
MARINADE
3/4 c brown sugar, firmly packed
1/2 c Dijon mustard
1 jalapeno pepper; finely diced
1/2 c cilantro, fresh; finely chopped, or 2 Tbsp coriander
1 tsp each salt and pepper

Steps:

  • 1. In a large measuring cup mix the sugar, mustard, jalapeno, cilantro, salt, and pepper.
  • 2. Place chicken drumsticks in a resealable bag and pour marinade over the top. Seal bag; turn to completely coat chicken. Remove air from bag; seal tightly. Place in refrigerator for a least one hour; overnight is best.
  • 3. Grill over low heat to medium heat depending on your grill, turning occasionally to achieve doneness and beautiful grill marks. Cooking over very low heat will take about 1 hour or more to completely cook meat.
  • 4. Another option, instead of standing over the grill, is to place chicken on the grill over medium heat and turn to achieve grill marks. Place semi-cooked chicken in 13 x 9 pan, cover with foil, and place in a 250 F oven for about 30 to 45 minutes to complete cooking. You will have wonderfully moist chicken either way. Do not overcook or your chicken will be dry.

CILANTRO-LIME MARINATED GRILLED CHICKEN

Cilantro-Lime Marinated Grilled Chicken image

I came up with this cilantro-lime marinated grilled chicken when I was craving Mexican food one night. Try using the marinade on pork tenderloin or beef flank steak. Amazing! Use one recipe of marinade per pound of meat.

GRILLED CHICKEN WITH CILANTRO MARINADE

Grilled Chicken With Cilantro Marinade image

This has become a quick and easy favorite that we frequently make on the grill. Despite the ease of prep, it is bursting with flavor. It is from the Black Dog Tavern's Summer on the Vineyard Cookbook.

Categories     Chicken Breast

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 8

4 boneless skinless chicken breasts
1 -2 tablespoon chopped fresh cilantro
1 garlic clove, minced (I use more)
1 lime, zest of
2 -3 tablespoons fresh lime juice
1/4 cup extra virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
  • Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
  • Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.
  • Serve and enjoy.

Tips:

  • Use fresh cilantro: Fresh cilantro adds a vibrant flavor to the marinade. If you don't have fresh cilantro, you can substitute it with dried cilantro, but the flavor will be less intense.
  • Use a good quality olive oil: A good quality olive oil will add a rich flavor to the marinade. Make sure to use extra virgin olive oil for the best flavor.
  • Marinate the chicken for at least 30 minutes: This will allow the flavors of the marinade to penetrate the chicken and make it more flavorful.
  • Grill the chicken over medium-high heat: This will help to prevent the chicken from sticking to the grill and will also help to create a nice char.
  • Don't overcook the chicken: Overcooked chicken is dry and tough. Cook the chicken until it is cooked through but still juicy.

Conclusion:

Grilled chicken with cilantro marinade is a delicious and easy-to-make dish that is perfect for a summer barbecue. The marinade adds a bright and flavorful taste to the chicken, and the grilling process creates a nice char that adds a smoky flavor. This dish is sure to be a hit with your family and friends.
