GRILLED CHICKEN TACOS

Grilled Chicken Tacos image

Chicken breasts aren't the only cut sold skinless and boneless. Thighs are, too. They're fattier than breasts, which means they're more flavorful; plus, they're less expensive. Put them to work in any fast weeknight preparation, starting with these spiced tacos.

Yield Makes 4 servings

Number Of Ingredients 11

1 medium onion, cut into wedges, keeping root intact
2 garlic cloves, finely chopped
1 pound skinless, boneless chicken thighs
1 tablespoon cumin seeds, coarsely crushed
1 tablespoon vegetable oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
8 corn tortillas, warmed (for serving)
2 avocados, sliced (for serving)
Charred Tomatillo Salsa Verde (for serving)
Cilantro sprigs, sliced radishes, and lime wedges (for serving)

Steps:

  • Prepare grill for medium-high heat. Toss onion, garlic, chicken, cumin, oil, salt, and pepper in a medium bowl. Grill onion and chicken until cooked through and lightly charred, about 4 minutes per side.
  • Let chicken rest 5 minutes before slicing. Serve with tortillas, avocados, Charred Tomatillo Salsa Verde, cilantro, radishes, and lime wedges.

Tips:

  • Use quality ingredients: Fresh, high-quality ingredients make all the difference in the flavor of your tacos. Look for ripe tomatoes, crisp lettuce, and tender chicken.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of spices and herbs helps to tenderize it and add flavor. You can use a simple marinade made with olive oil, garlic, cumin, and chili powder, or try a more complex marinade with ingredients like yogurt, lemon juice, and fresh herbs.
  • Cook the chicken properly: Grilled chicken is the perfect protein for tacos. Be sure to cook it over medium heat until it is cooked through but still juicy. You can also cook the chicken in a skillet or in the oven.
  • Make your own tortillas: Homemade tortillas are a delicious and authentic option for tacos. If you don't have time to make your own, you can use store-bought tortillas. Just be sure to heat them up before serving.
  • Load up on toppings: Tacos are all about the toppings! Be sure to offer a variety of options, such as shredded cheese, sour cream, guacamole, pico de gallo, and salsa. This allows your guests to customize their tacos to their liking.

Conclusion:

Grilled chicken soft tacos are a delicious and easy meal that can be enjoyed by people of all ages. They are perfect for a casual weeknight dinner or a fun party. With a little planning, you can have a delicious and authentic taco feast in no time.
