Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best for this recipe. If you prefer darker meat, use chicken thighs. Just be sure to adjust the cooking time accordingly.
  • Marinate the chicken: Marinating the chicken in a flavorful mixture of olive oil, herbs, and spices helps to tenderize the meat and add flavor.
  • Cook the chicken over medium-high heat: This will help to create a nice sear on the outside of the chicken while keeping the inside juicy.
  • Use a variety of greens: This salad is a great way to use up any leftover greens you have in your fridge. Arugula, spinach, kale, and romaine lettuce are all great choices.
  • Make the balsamic dressing ahead of time: This dressing can be made up to 3 days in advance. Just be sure to shake it well before using.
  • Serve the salad immediately: This salad is best served fresh. The chicken will start to toughen up if it sits for too long.

Conclusion:

This grilled chicken salad is a healthy and flavorful meal that is perfect for a quick lunch or dinner. The combination of grilled chicken, fresh greens, and balsamic dressing is sure to please everyone at the table. Plus, it's a great way to use up any leftover chicken or greens you have on hand. So next time you're looking for a healthy and delicious meal, give this grilled chicken salad a try.
