MUSTARD CHICKEN SALAD

Provided by Ina Garten

Categories     main-dish

Time 1h1m

Yield 4 to 5 servings

Number Of Ingredients 10

2 whole (4 split) chicken breasts, bone-in, skin-on
Good olive oil
Kosher salt and freshly ground black pepper
2 cups broccoli florets
1 1/2 cups good mayonnaise
2 tablespoons dry white wine
1/4 cup Dijon mustard
3 tablespoons whole-grain mustard
2 tablespoons minced fresh tarragon leaves
1 cup cherry or grape tomatoes, halved

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken in large bite-size pieces.
  • Meanwhile, add the broccoli florets to a large pot of salted boiling water. Cook for 1 minute, until crisp tender, drain, and place into a bowl of ice water until cool. This will stop the cooking and set the bright green color.
  • For the dressing, whisk together the mayonnaise, wine, mustards, 1 tablespoon salt and 1/2 teaspoon pepper. Add enough sauce to the warm chicken to moisten well. Add the tarragon, broccoli, and tomatoes and mix gently to combine. Refrigerate for a few hours to allow the flavors to blend. Serve at room temperature.

Categories     main-dish

Time 30m

Yield 4 appetizer servings or 2 large servings

Number Of Ingredients 13

8 ounces red grapes, broken into small bunches
1 tablespoon olive oil
2 tablespoons honey
1 teaspoon Dijon mustard
1/2 lemon, juiced
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 stalks celery with leaves, sliced into 1/3-inch pieces
2 grilled chicken breast halves, thinly sliced crosswise
1 Granny Smith apple
1/2 cup lightly toasted walnut halves or pieces
4 Bibb lettuce leaves, for serving
Prepare a grill for medium-high heat.

Steps:

  • For the grilled grapes: Drizzle the bunched grapes with the olive oil, turning to coat. Place in a grill basket on the grill and cook, gently turning to cook evenly, until the grapes are slightly soft and beginning to char and burst, 3 to 4 minutes. When cool enough to handle, remove the grapes from the stems and set aside.
  • For the dressing: Meanwhile, in a large bowl, whisk together the honey, Dijon mustard and lemon juice. Continue to whisk while slowly streaming in the olive oil. Season with salt and pepper.
  • For the salad: Add the celery and chicken to the bowl with the dressing. Core, halve, then slice the apple into 1/4-inch slices, and add to the bowl. Add the walnuts and cooled grapes to the bowl and toss to coat everything with the dressing.
  • To serve, line a salad plate with the lettuce leaves. Spoon a quarter of the chicken salad over the top of each leaf. Serve immediately.

Number Of Ingredients 10

Vegetable oil, for grill pan
6 skinless, boneless chicken breast halves (about 2 pounds)
Coarse salt and freshly ground pepper
2 cups cooked chickpeas
3 fresh Poblano peppers, seeded, deribbed, and finely chopped
1 medium red onion, finely chopped
Cilantro-Lime Vinaigrette
3 ripe, firm avocados, peeled, pitted, and diced
Lime slices, for serving
4 sprigs fresh cilantro, for serving

Steps:

  • Oil a grill pan and place over high heat until hot. Season chicken with salt and pepper. Working in batches so as not to crowd the pan, place chicken skin-side down on grill pan. Cook 4 minutes. When chicken is cool enough to handle, cut into medium dice, and transfer to a large bowl.

  • Whisk together remaining 1/2 cup oil, 1/3 cup lemon juice, and 1 teaspoon garlic, the shallot, mustard, salt, and chopped mint in a medium bowl. Arrange lettuce, whole mint leaves, and peas on a large serving platter. Toss chicken in dressing, and arrange on salad. Pour remaining dressing over salad.

APRICOT GLAZED GRILLED CHICKEN

Apricot Glazed Grilled Chicken image

We really like Apricot Chicken. In the summer I hate to heat up the house. DH made this for a cookout. Absolutely delicious! **There is also a variation in the directions for Asian Glazed Chicken. *PLEASE NOTE!* For easier clean up I would suggest using a grill pan or aluminum to cook the chicken on. Found this recipe in Cooking Light.

Prepare Apricot-Glazed Grilled Chicken, omitting apricot preserves, vinegar, olive oil, and garlic. Baste chicken with hoisin mixture after each turn. Yield: 4 servings (serving size: 1 chicken breast half or 1 thigh and 1 drumstick).

Tips:

  • For a smokier flavor, grill the chicken over charcoal instead of gas.
  • To save time, you can use pre-cooked chicken or rotisserie chicken from the grocery store.
  • If you don't have any apricot preserves, you can use another type of fruit preserves, such as peach or strawberry.
  • Be sure to chill the salad for at least 30 minutes before serving to allow the flavors to meld.
  • This salad is also great for meal prep. Simply pack it in individual containers and store it in the refrigerator for up to 3 days.

Conclusion:

This grilled chicken salad with apricot glaze, homemade mustard vinaigrette, and grape salad is a delicious and refreshing summer meal. The chicken is tender and juicy, the glaze is sweet and tangy, and the vinaigrette is perfectly balanced. The salad is also packed with healthy ingredients, such as fruits, vegetables, and nuts.
