1/3 cup extra-virgin olive oil
1/4 cup chopped parsley
1 teaspoon lemon zest, from 1 lemon
1/4 teaspoon salt
3/4 teaspoon kosher salt
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
8 chicken breast cutlets
8 slices Prosciutto di Parma
8 slices provolone picante cheese
8 oil-cured sundried tomatoes
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat a charcoal grill to medium-high heat. Move the coals to the side so that one part of the grill has indirect heat.
  • In a small bowl stir together the olive oil, parsley, lemon zest and salt. Set aside.
  • In a separate small bowl, mix together the salt, oregano and red pepper flakes.

Remove from the grill and allow to rest for 5 minutes. Remove the skewers from the involtini, slice and serve, drizzled with the parsley oil.

18 lasagna noodles, cooked and drained
2 cups marinara sauce
1 teaspoon vegetable oil
2 portobello mushrooms, diced
1 cup frozen chopped spinach
2 cups diced cooked chicken
1 (15 ounce) container ricotta cheese
½ cup grated Parmesan cheese
1 teaspoon dried oregano
salt and ground black pepper to taste
2 cups Alfredo sauce
1 cup shredded mozzarella cheese
¼ cup pine nuts

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the lasagna noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles are cooked, but still firm to the bite, about 8 minutes; drain and rinse.

  • Bake, covered, in the preheated oven for 40 minutes. Uncover; sprinkle with mozzarella cheese and pine nuts. Return to the oven and bake until the cheese is melted and bubbly and the pine nuts are toasted, about 10 minutes. Serve hot.

4 slices provolone cheese or 4 slices mozzarella cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated romano cheese or 1/2 cup parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk

Steps:

  • Flatten chicken to 1/4-inch thickness.
  • Place a slice of ham and cheese on each piece of chicken.
  • Roll up from a short side and tuck in ends; secure with a toothpick.

4 chicken breast halves, grilled and thinly sliced
1 red bell pepper, 1/4 inch thick strips, roasted and cut

2 cups shredded cheddar cheese
nonstick cooking spray
2 -2 1/2 cups barbecue sauce (or more as desired)

Steps:

  • Preheat oven to 375°F degrees.
  • Bring large pot of water to boil.
  • Turn off heat and add lasagna noodles.
  • Let sit 5 minutes.
  • Remove lasagna noodles to platter to cool.

4 -6 slices pastrami or 4 -6 slices salami, lunch meat
4 -6 boneless chicken breasts
bacon, uncooked
seasoned steak sauce
toothpick

Steps:

  • Take the chicken breast and roll them til they are flat.
  • put a slice of pastrami on the flat chicken breast and than roll it up.
  • Wrap the slice of bacon around it use the toothpicks to hold the bacon in place.
  • Pour the steak seasoning on it and refrigerate over night.
