1 cup Cascadian Farm® organic raspberry fruit spread
1/4 cup red wine vinegar
2 tablespoons olive oil
4 boneless skinless chicken breasts (about 1 lb)
8 cups torn fresh spinach
1 bag (10 oz) Cascadian Farm® frozen organic red raspberries, thawed, drained
1/2 cup thinly sliced red onion
1/4 cup sliced almonds, toasted

Steps:

  • Heat gas or charcoal grill. In small bowl, stir together fruit spread, vinegar and oil; reserve 1/3 cup for glaze. Set remaining mixture aside.
  • Carefully brush grill rack with oil. Place chicken on grill over medium heat. Brush chicken with reserved glaze. Cover grill; cook 5 minutes. Turn chicken over; brush with glaze. Cover grill; cook 3 to 7 minutes longer, brushing occasionally with glaze, until juice of chicken is clear when center of thickest part is cut (170°F).
  • Meanwhile, on 4 individual dinner plates, arrange spinach, raspberries, onion and almonds. Cut each grilled chicken breast into slices; place on top of salads. Drizzle with remaining fruit spread mixture.

6 cups cubed, cooked chicken meat
2 cups chopped celery
2 cups seedless grapes
1 (8 ounce) can sliced water chestnuts
½ cup sour cream
½ cup plain yogurt
1 ½ teaspoons curry powder
salt and pepper to taste

Steps:

  • Cut melon in half, and remove seeds. With a melon baller, scoop out melon balls; place in a large salad bowl.
  • Add chicken, celery, and grapes to melon. Add water chestnuts if desired.
  • In a small bowl, mix together, sour cream, yogurt, and curry powder. Gently stir into salad. Season with salt and pepper to taste. Serve.

1 tbsp rice wine vinegar
1 to 2 tbsp chopped fresh tarragon
2 1/2 tsp brown sugar,divided
2 1/2 tsp garlic pepper
1 1/4 lb chicken breast halves, skinless and boneless
1/2 cup chopped pecans,toasted
1 cup small honeydew melon balls**
1 large green onion,sliced

Steps:

  • 1. Preheat grill to med.in a med bowl,blend mayonnaise,vinegar,tarragon,1/2 tsp brown sugar salt & pepper to taste.cover and chill.
  • 2. blend remaining 2 tsp brown sugar,garlic pepper in a small bowl.rub chicken breasts evenly with sugar mixture.grill chicken,covered, 8-12 min,turning once.remove when juices run clear and chicken is 165'f cool slightly.
  • 3. Coarsely chop or shred chicken.add chicken,melon,green onion to dressing mixture;toss lightly.serve immediately. in a halve of honeydew bowl.

1/2 cup mayonnaise
1 tablespoon honey mustard
2 cups cubed grilled chicken
2 cups washed fresh baby spinach leaves
1 cup cherry tomatoes, halved
1 stalk celery, chopped (1/3 cup)
1 cup shredded Cheddar cheese (4 oz)
3 hard-cooked eggs, coarsely chopped
3 slices bacon, crisply cooked and crumbled

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain.
