- Place the chicken breasts between two pieces of plastic wrap and pound each of them with a meat mallet so they are an even thickness.

GRILLED CHICKEN THIGHS WITH SPICY PEANUT LIME SAUCE
Steps:
- Preheat a grill to 400 degrees F or a large grill pan over medium heat. Clean and oil the grill grates or grill pan.
- Place the thighs on a rimmed baking sheet and drizzle with 1 to 2 tablespoons of oil until fully coated; liberally season both sides with salt and pepper. Grill the chicken skin-side down, covered, until golden brown and crispy, about 15 minutes (or up to 20 minutes, if using a grill pan). Check on the thighs occasionally to make sure they aren't burning. Flip the chicken and grill, covered, until crispy and cooked through, about 15 minutes longer.
- Meanwhile, make the sauce: Combine the lime zest and juice with the peanut butter, chile paste, honey, tamari and 1/2 teaspoon salt in a small bowl. Whisk together and taste for seasoning. Transfer to a small serving bowl.
- When the chicken is ready, remove it to a platter or a large shallow bowl. Drizzle with some of the sauce then sprinkle with the scallions, cilantro and peanuts. Serve immediately with the remaining sauce on the side.

Tips:
- Choose the right chicken breasts: Look for boneless, skinless chicken breasts that are about the same size so they cook evenly. You can also use chicken thighs if you prefer.
- Marinate the chicken: Marinating the chicken in a flavorful mixture of olive oil, herbs, and spices helps to tenderize the meat and add flavor. You can marinate the chicken for as little as 30 minutes or up to overnight.
- Cook the chicken over medium heat: Cooking the chicken over medium heat helps to prevent it from drying out. If you cook the chicken over high heat, it will brown too quickly on the outside but remain raw on the inside.
- Use a meat thermometer to check for doneness: The best way to ensure that the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken breast and cook until it reaches an internal temperature of 165 degrees Fahrenheit.
- Make the zesty peanut sauce while the chicken is cooking: The zesty peanut sauce is a great way to add flavor and moisture to the chicken. You can make the sauce in a blender or food processor in just a few minutes.
- Serve the grilled chicken with the zesty peanut sauce and your favorite sides: The grilled chicken and zesty peanut sauce can be served with a variety of sides, such as rice, quinoa, vegetables, or salad.
Conclusion:
This grilled chicken breast with zesty peanut sauce is a delicious and healthy meal that is perfect for a weeknight dinner. The chicken is tender and flavorful, and the peanut sauce is creamy and tangy. This dish is sure to be a hit with your family and friends.
