GRILLED CHICKEN FLATBREAD PIZZAS

Grilled Chicken Flatbread Pizzas image

This is an excellent way to enjoy your gas grill, use up some leftovers and cook up something beautiful and delicious in just a few minutes. Great for the day after a barbecue party when you discovered you made too much of something! This one is leftover grilled chicken, but I think it would work with any leftover grilled meat (except, perhaps, hot dogs). I made this today for lunch, after we finished, my daughter said it would have been better with some fresh basil, so I have added that to the ingredients.

Time 7m

Yield 4 flatbread pizzas, 4-6 serving(s)

Number Of Ingredients 8

4 flat bread (you can use thin pita bread)
1 1/2 cups of sliced leftover grilled chicken
1/2 cup sun-dried tomato packed in oil, coarsely chopped
6 leaves fresh basil, coarsely chopped
3 cups grated mozzarella cheese
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon red pepper flakes

Steps:

  • Heat the grill. Mix all the ingredients together (except the bread) in a bowl. Use your hands. It's easier.
  • Turn the heat to low on your grill. Lay the flat breads on (high rack if you have one). Mound the mixture on the flat bread, spreading to the edges. Close the grill and give it a minute or two, When it is melted, it's done. (If you leave it on too long, the bread will burn).
  • Put it on a bread board and cut it with a pizza cutter.

Time 50m

Yield 8

Number Of Ingredients 24

4 tablespoons butter
¼ teaspoon salt
1 dash ground black pepper
4 tablespoons all-purpose flour
1 cup milk
¾ cup grated Romano cheese
2 tablespoons butter
1 clove garlic, minced
1 pinch dried rosemary
1 pinch salt
1 cup warm water
1 (.25 ounce) package instant yeast
2 tablespoons vegetable oil
1 tablespoon white sugar
½ teaspoon salt
¼ teaspoon dried rosemary
¼ teaspoon garlic powder
3 cups all-purpose flour
2 boneless chicken breast halves, roasted
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
¼ teaspoon poultry seasoning
¼ teaspoon garlic powder
¼ teaspoon salt

Steps:

  • To Make Sauce: Melt butter in a small saucepan over medium heat. Blend in salt, pepper and flour, then stir in the milk and Romano cheese. Simmer, stirring constantly, until thickened. Remove from heat, cover and set aside.
  • To Make the Garlic Butter: Melt the butter in a small saucepan over medium heat. Blend in the garlic, rosemary, and salt. Cook, stirring constantly, until garlic is tender but not browned. Remove from heat, cover and set aside.
  • To Make the Dough: Pour the warm water into a small bowl and stir in the yeast until dissolved. Allow to rest until yeast foams, about 5 minutes. Mix the vegetable oil, sugar, salt, rosemary, and garlic powder together in a mixing bowl. Stir in the yeast mixture, and gradually stir in the flour. Gather into a loose ball and knead until a smooth ball forms. Cover, and let rest 1/2 hour.
  • Preheat oven to 400 degrees F (200 degrees C). Season the roasted chicken with rosemary, thyme, poultry seasoning, garlic powder and salt. Chop or shred and reserve.
  • To Assemble the Pizza: Spread dough out on prepared pizza stone. Top with cooled garlic butter, covering entire crust. Next spread with Alfredo Sauce (if necessary, warm to spreading consistency), leaving crust edges. Top with chicken, turning to coat with sauce.
  • Bake in preheated oven for 20 minutes, or until bottom crust is lightly browned. Remove from oven and let set for 2 to 3 minutes before cutting.

Tips for Making the Best Grilled Chicken Alfredo Flatbread Pizzas

1. Use High-Quality Ingredients: The better the ingredients, the better the pizza will be. Choose fresh, flavorful vegetables and high-quality cheese. 2. Marinate the Chicken: Marinating the chicken in a flavorful marinade for at least 30 minutes will help it stay moist and tender. 3. Cook the Chicken to Perfection: Be careful not to overcook the chicken, as it will become dry and tough. Cook it until it reaches an internal temperature of 165 degrees Fahrenheit. 4. Use a Good Quality Alfredo Sauce: The Alfredo sauce is a key component of this dish, so choose a good quality sauce that is made with real ingredients. 5. Don't Overcrowd the Flatbread: When assembling the pizzas, don't overload them with toppings. Too many toppings will make the pizzas soggy and difficult to eat. 6. Cook the Pizzas Until the Crust is Golden Brown: Bake the pizzas until the crust is golden brown and crispy. This will help ensure that the pizzas are cooked through and delicious.

Conclusion

Grilled Chicken Alfredo Flatbread Pizzas are a quick and easy meal that is perfect for busy weeknights. They are also a great way to use up leftover chicken. With a few simple ingredients, you can create a delicious and satisfying meal that the whole family will enjoy.
