This gooey and crunchy grilled cheese is perfect for feeding a crowd and easier to whip up then a whole loaf's worth of individual sandwiches.

1 loaf unsliced white bread or brioche loaf (about 1 pound 5 ounces)
1/4 cup mayonnaise
1/3 pound sliced sharp Cheddar
1/3 pound sliced Monterey jack cheese
1/3 pound sliced low moisture part-skim mozzarella

Steps:

  • Put 1 baking sheet on the center rack of the oven and preheat to 350 degrees F.
  • Slice 1/4-inch of the crust off the top and bottom of the loaf of bread. Split the loaf evenly in half, horizontally. Cut a piece of parchment paper large enough to accommodate both halves of bread and put both the top and the bottom on the parchment, cut-side up so the inside of the loaf is visible.
  • Scoop about a 1/4-inch of the soft middle of the loaf out. Spread the mayonnaise evenly on the crustless top of each half, then flip them over so the mayonnaise-side is face down on the parchment.
  • Evenly distribute the 3 cheeses between the 2 bread halves. Use the parchment to transfer your grilled cheese to the preheated baking sheet, using a spatula if the bread is sticking, then remove and discard the parchment. Bake until the crust is golden brown and crunchy and the cheese is melted, about 18 minutes. Remove from the oven and immediately sandwich the 2 halves with the cheese in the middle. Let rest about 10 minutes. Slice and serve while hot.

4 pieces rye bread or pickled rye bread, sliced 3/4-inch thick, such as Carissa's Salty Soured Pickled Rye (see Cook's Notes)
4 tablespoons unsalted butter, softened
1 tablespoon Dijon mustard
1/2 yellow onion, thinly sliced
2 cups shredded Cheddar or Gruyere
1/3 cup sliced spicy pickles or pickle chips

Steps:

  • Heat a griddle pan over medium heat. Spread one side of each piece of bread with the softened butter, then flip them over so they are buttered side down. To 2 of the pieces of bread, spread the Dijon evenly over the surface. Divide the sliced onion evenly between 2 pieces of bread. Divide the cheese between the 2 pieces of bread, then cover the surface with spicy pickles. Top each sandwich with the remaining pieces of bread, buttered side out.
  • Using a serrated knife, cut the crusts off both sandwiches.
  • Add the sandwiches to the griddle pan and cook until golden brown and crisp, 2 to 3 minutes. Flip and continue to cook on the other side until the cheese has melted completely and the sandwiches are golden brown and crisp, 2 to 3 minutes.
  • Remove the sandwiches to a cutting board, slice into bars and serve.

4 slices ciabatta
2 slices American cheese
2 slices swiss cheese
4 slices tomatoes
2 slices vidalia onions, thin
butter or olive oil

Steps:

  • Heat pan or stove top grill.
  • Use butter or olive oil to coat one side of each slice.
  • Place 2 slices oil side down and arrange american cheese, tomato, onion then swiss cheese.
  • Top with remaining slice of bread, oil side out.
  • Heat on medium heat till brown. I like to weigh down with iron skillet (or similar) to make a panini type sandwich.
  • Flip and repeat for other side. Enjoy!

8 slices sandwich bread, no more than 1/2-inch thick
Mayonnaise
12 ounces grated Cheddar or other good melting cheese, like pepper Jack (about 3 cups)
Flaky or kosher salt

Steps:

  • Prepare a charcoal or gas grill for medium heat. (Medium is 325 degrees to 375 degrees. You should be able to hold your hand 4 to 5 inches above the grates for 6 to 7 seconds.)
  • Thinly spread mayonnaise on one side of each piece of bread. When you're ready to grill, take the bread, cheese, salt and a spatula to the grill. Clean the grates with a grill brush. (No need to grease the grates.) Place the slices mayonnaise side down on the grill. Evenly sprinkle half the slices with about 3/4 cup cheese. Cover the grill and cook until the bread is golden and the cheese is nearly all melted, 4 to 6 minutes. Check on the bread often, moving slices around the grill as needed to avoid burning.
  • Use the spatula or your hands to top the cheese halves with the other toasted slices. Transfer to plates, press down slightly and sprinkle with salt.
