4 ounces cooked blue crab meat
2 slices sweet bread
1/2 ounce whipped mayonnaise
2 slices American cheese
1 ounce shredded cabbage, plus for garnish
1 ounce diced tomato
1/2 ounce Lemon Beurre Blanc, recipe follows
1/2 ounce shredded cheese mix
1/2 ounce Lava Sauce, recipe follows
Paprika, for garnish
6 ounces shoestring fries, for serving
2 shallots, finely chopped
8 ounces white wine
2 ounces lemon juice
1 tablespoon heavy cream
12 tablespoons (1 1/2 sticks) cold unsalted butter, cubed
Salt and white pepper
4 cups mayonnaise
1/2 cup sambal
1 cup sweet Thai chile sauce
1/4 cup lemon juice

Steps:

  • Heat the lobster and crab meat.
  • Spread the bread slices evenly with mayonnaise and toast on a flattop grill. Repeat on reverse side.
  • Add the American cheese, lobster, crab meat, cabbage, tomato, Lemon Beurre Blanc and shredded cheese to one of the slices and form a sandwich. Toast until the cheese is melted.

3 -4 tablespoons butter, sofetened

2 cups crabmeat (Surimi works too if you can't afford or get fresh crab)
2 cups cheddar cheese
4 -5 tablespoons mayonnaise
2 green onions, minced
8 slices sourdough bread
5 tablespoons melted butter

Steps:

  • In a medium sized bowl place the crab or surimi and pick through to remove any bones or cartilage.
  • Stir in the cheese, green onions and just enough mayonnaise to hold it all together.
  • Spoon the crab on 4 slices of bread and top with remaining bread.

  • Brush tops of bread liberally with melted butter and place butter side down on hot griddle.

1 tsp minced garlic
1/2 lb jumbo shrimp, shelled and deveined (about 9 prawns)
2 Tbsp good olive oil
1 lb scallops, rinse well
8 oz crab (flaked)
4 oz optional: krab (imitation crab)
1/2 lemon (juiced)
1 Tbsp dill weed
1/2 c cream cheese
3 Tbsp optional: green onions, diced
slice Swiss cheese
slice sourdough bread
2 Tbsp butter, for toasting the bread
2-3 lemons, sliced to serve with the sandwiches

  • 1. Saute shrimp in butter with garlic. Remove to plate when pink. Then give a rough chop.
  • 2. In the same skillet, saute scallops in the remaining butter, adding a little olive oil. Braze 2 minutes and turn. Don't overcook! Give a rough chop.
