- Put four of the slices of bread on the counter. Top with the American cheese, the bacon, and the avocado. Sprinkle the Colby cheese over all.
- Top with the rest of the slices of bread. Then spread the outsides of the sandwiches with the softened butter. Use 2 teaspoons for each slice of bread.
- Briefly heat a nonstick skillet over medium heat. Add the sandwiches, press down on them with a spatula, and cover the pan.
- After 2 minutes, remove the cover and lift one of the sandwiches with a spatula. If it's brown, carefully turn the sandwiches. If not, let it cook for another minute.
- When the sandwiches are all flipped, gently press down on them with the spatula again and cover the pan. Grill for another 2 to 3 minutes or until the bread is crisp and golden and the cheese is melted.

- Place the chicken presentation-side down on a baking tray and sprinkle with half of the salt, tarragon, pepper, thyme and garlic.
