Time 25m

Yield 4

Number Of Ingredients 10

¼ cup olive oil
1 lemon, juiced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon smoked paprika
1 teaspoon brown sugar
½ teaspoon chili powder
1 pinch ground black pepper to taste
2 large heads cauliflower
2 tablespoons minced cilantro

Steps:

  • Preheat grill to medium-high heat and lightly oil the grate.
  • Whisk oil, lemon juice, garlic, salt, smoked paprika, brown sugar, chili powder, and black pepper together in a bowl. Set aside.
  • Remove the tough bottom leaves from each cauliflower, taking care not to remove the stem. Place the cauliflower heads onto a cutting board with the stem side facing upwards; cut vertically on both sides of the stem to remove the loose florets. Reserve florets for another use.
  • Cut each cauliflower vertically through the stem into 2 even "steaks", 1 to 1 1/2 inches thick. Remove any remaining small leaves from each steak. Place the 4 steaks on a baking sheet.
  • Brush one side of the steaks with some of the oil mixture. Place steaks on the grill, oiled side down; grill for 5 minutes. Brush more oil mixture on top of the steaks and gently flip over; grill until golden brown and slightly charred, 5 to 7 minutes more. Drizzle with any remaining oil and remove to a plate. Sprinkle with cilantro.

Tips:

  • Selecting the right cauliflower: Choose a head of cauliflower that is compact and dense, with tightly packed florets. Smaller heads, typically around 1 pound, are ideal for grilling as they cook more evenly.
  • Preparing the cauliflower steaks: Cut the cauliflower into 1-inch thick slices, ensuring they are all roughly the same size for even cooking. Use a sharp knife to make clean, even cuts.
  • Marinating the steaks: Marinating the cauliflower steaks in a mixture of olive oil, herbs, and spices infuses them with flavor and helps prevent them from drying out during grilling. You can use a variety of marinades to suit your taste preferences.
  • Grilling the steaks: Preheat your grill to medium-high heat. Brush the grates with oil to prevent the cauliflower from sticking. Grill the steaks for 8-10 minutes per side, or until they are tender and slightly charred.
  • Serving and enjoying: Grilled cauliflower steaks can be served immediately or at room temperature. You can top them with various sauces, such as tahini sauce, chimichurri, or a simple vinaigrette. They pair well with grilled vegetables, quinoa, or rice.

Conclusion:

Grilled cauliflower steaks are a delicious and healthy alternative to traditional grilled meats. They are packed with nutrients, including vitamins, minerals, and fiber, making them a great option for a balanced diet. The versatility of cauliflower steaks allows for various marinades and toppings, making them a customizable dish that can be enjoyed by vegetarians, vegans, and meat-eaters alike. Whether served as a main course or a side dish, grilled cauliflower steaks are a flavorful and satisfying addition to any meal.
