This rolled flank steak has a surprise inside: all the flavors of the Cuban stew ropa vieja arranged in a pretty pinwheel.

Time 2h15m

Yield 4 to 6 servings

Number Of Ingredients 12

3 poblano peppers
2 red bell peppers
1 large white onion, sliced into 1-inch-thick rounds
One 2-pound flank steak
1/2 cup cilantro leaves, finely chopped
1/3 cup tomato paste (3 ounces)
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon dried oregano, preferably Mexican
6 scallions, white and light green parts only, finely chopped
Kosher salt
1/2 cup pimento-stuffed Spanish olives

Steps:

  • Prepare an outdoor grill for direct and indirect grilling. (If your grill has a thermometer, aim to keep the temperature at about 350 degrees F throughout grilling.) Cook the poblano and bell peppers on the grill, turning occasionally, until completely charred on the outside, about 15 minutes. Transfer to a bowl and cover with a plate to steam for about 10 minutes.
  • Meanwhile, grill the onions until golden and soft, about 10 minutes. Transfer to a plate. Peel the poblano and bell peppers and remove and discard the stems and skins. Cut the flesh into 1/2-inch strips and set aside. (Keep the poblano strips separate from bell pepper strips.)
  • Set the steak on a cutting board. Using a long thin knife and starting at the thin, narrow end of the steak, slice it in half horizontally leaving 2 inches of the meat uncut at the wide end of the steak so the pieces stay attached. Open it up like a book so you have one long piece. Pound the steak with a meat mallet to an even thickness of about 1/4 inch.
  • Arrange the steak flat on a work surface with a long side facing you. Combine the cilantro, tomato paste, oil, cumin, oregano, scallions and 2 teaspoons salt in a bowl. Spread the paste all over the top of the steak. Working in three batches, arrange vertical stripes of the poblanos, bell peppers, onions, and olives on the steak until the steak is covered, leaving 2 inches empty at each end.
  • Roll up the steak like a jelly roll, starting at one of the short ends. Tie the steak closed around the circumference with butcher's twine at 2-inch intervals. Tie one more piece of twine lengthwise around the steak.
  • Put the steak on the direct heat side of the grill and cook, turning, to brown all 4 sides, about 2 minutes per side. Move the steak to the indirect heat side of the grill, cover and cook, turning occasionally, until the center of the steak registers 115 degrees F on an instant-read thermometer, 25 to 30 minutes for a steak that is well-done on the outside and medium-rare in the center. (Test frequently; the time will vary based on the temperature of your grill.) Let the steak rest about 10 minutes.
  • Untie the steak and cut it into 6 thick slices.

CHEF JOHN'S GRILLED MOJO BEEF

Chef John's Grilled Mojo Beef image

This Cuban-inspired mojo marinade would work great as an all-purpose marinade for just about anything destined for the grill, but skirt steak is my top choice.

Time 2h18m

Yield 4

Number Of Ingredients 14

2 pounds beef skirt steak
1 large navel orange, juiced
3 limes, juiced
¼ cup olive oil, plus more for drizzling
6 cloves garlic, finely minced
1 tablespoon kosher salt
1 ½ teaspoons ground cumin
1 teaspoon freshly ground black pepper
½ teaspoon dried oregano
½ teaspoon cayenne pepper
½ onion, thinly sliced
½ cup fresh chopped cilantro
1 teaspoon coarse salt for finishing
Lime wedges for serving

Steps:

  • Cut skirt steaks into about 3 or 4 smaller pieces so it's easier to fit them into marinade dish.
  • Whisk orange juice, lime juice, olive oil, garlic, salt, cumin, pepper, oregano, and cayenne pepper together in a large bowl. Place skirt steak pieces, 1 at a time, into the marinade to thoroughly coat them. Add sliced onions and toss with the meat.
  • Transfer mixture and marinade to a resealable plastic bag. Squeeze out air, seal bag, and place on a dish. Refrigerate 2 to 3 hours.
  • Transfer pieces of meat onto paper towel-lined rimmed sheet pan to drain for a couple of minutes.
  • Cook over hot coals. Grill first side 3 to 4 minutes. Turn and grill second side until internal temperature is about 125 degrees F (53 degrees C). Look for a shiny glossy surface indicating the meat juice is coming to the surface; this indicates the meat is just about done. Transfer to a plate and allow meat to rest a few minutes.
  • Slice into 1/2-inch slices and arrange on a serving plate. Spoon accumulated juices over the meat. Drizzle with olive oil and sprinkle with coarse salt and chopped cilantro. Serve with lime wedges.

CARIBBEAN STEAK WITH GRILLED PLANTAINS AND COLESLAW RECIPE - (4.3/5)

Caribbean Steak with Grilled Plantains and Coleslaw Recipe - (4.3/5) image

Provided by HeatherS

Number Of Ingredients 13

1 bag coleslaw vegetable mix
3 green onions, sliced
2 tablespoon cider vinegar
4 teaspoon vegetable oil
1/2 teaspoon each salt and pepper
pinch granulated sugar
1 teaspoon chopped fresh thyme
1/2 teaspoon each ground allspice, and coriander
2 strip loin grilling steaks, (each about 340 g), trimmed and halved crosswise
1 tablespoon butter, melted
1 tablespoon brown sugar
1 tablespoon rum, optional
2 ripe plantains, peeled and thickly sliced

Steps:

  • In large bowl, combine coleslaw mix, green onions, cider vinegar, oil, half each of the salt and pepper, and the granulated sugar; set aside. In small bowl, stir together thyme, allspice, coriander and remaining salt and pepper; rub all over steaks. Place on greased grill over medium-high heat; close lid and grill, turning once, until medium-rare, about 8 minutes. Transfer to plate; keep warm. Meanwhile, mix together butter, brown sugar and rum (if using); brush all over plantains to coat. Arrange plantains on greased grill; close lid and grill, brushing with any remaining butter mixture and turning once, until golden and tender, about 6 minutes. Serve with steaks and coleslaw.

Tips:

  • Use a good quality flank steak. Look for one that is well-marbled and has a deep red color. This will ensure that the steak is tender and flavorful.
  • Marinate the steak for at least 30 minutes, but no longer than 24 hours. This will help to tenderize the meat and infuse it with flavor.
  • Cook the steak over medium-high heat. This will help to create a nice crust on the outside while keeping the inside juicy.
  • Let the steak rest for 10 minutes before slicing. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • Serve the steak with your favorite sides, such as grilled plantains, rice, or beans.

Conclusion:

Grilled Caribbean flank steak with mojo and plantains is a delicious and easy-to-make dish that is perfect for a summer cookout. The steak is marinated in a flavorful mojo sauce, then grilled to perfection. The plantains are also grilled and served with a sweet and tangy sauce. This dish is sure to be a hit with your family and friends.
